今日は、徳島市でお泊りです。
前から気になっていた、栄寿司。
コース料理で、色々と要望ができます。 今回は8000円のコースで刺身と焼魚、後は鮨主体にしてもらいました。
妻の要望でどうしても食べてみたかったのが、ワカメのしゃぶしゃぶです。 メニューに取り入れてもらいました。
飲み物は生ビールにしました。
刺身盛り:天然鯛の刺身に鯛の皮・スマカツオ・アオリイカ・アジです。
ワカメのしゃぶしゃぶ:時期遅れなんですね・・ でも厳選して仕入れてくれました。
味噌汁の具材やサラダでしか食べた事のないワカメ。 料理として食べるのは初めてです。
ワカメの先から根株まであります。 しゃぶしゃぶして酢で頂きます。
しゃぶしゃぶすると、鮮やかな緑色になりました。 ツルツルした食感で根株はコリコリ。
酢が合います。 時期的には柔らかくシャキシャキした歯ごたえの事。
ノドグロの塩焼き:身はふっくらで、いい塩梅。脂身も甘く美味しいです。
鯛の肝と腸:フグ・カワハギほど濃厚さはありませんが珍味です。

鯛・ハモ?・鯵・アオリイカ・赤足海老・ぼうぜ・太刀魚の炙り・スマ鰹・ウニ・炙り穴子・鯛の皮・玉子
2番目に出てきた鮨、鱧だったかな・・ 名前忘れちゃいました。
生の穴子があるのでどうですか?言われて頂きました。 炙りで頂きます。
