2008年創業。
東京都杉並区の高円寺駅近くにある寿司屋だよ。
鮨 魯山 新宿店の店長まで勤めたご主人が、寿司職人であった親父さんの後を継いで始めたお店だね。
誠実なご主人の人柄と確かな腕前、飛び抜けたCPが世間の高い評価を受け、今や1年以上待ちの日本で予約が難しい店の一つなんじゃないかな。

【訪問前の準備】
□ 必ず事前予約のこと。
□ おそらく、予約日が一年以上先になるので、予定表にしっかり書き込み、忘れないようにすること(意外に忘れる方も多いらしい…)。
【当日】
□ つまみは、お店におまかせ。
□ お造りや焼き物は、勿論、季節によって内容が異なる。特に下記の料理は、食べられない時期がある。

□ 基本的なつまみの提供は、概ねこんな感じ。

□ 苦手なものは、始まる際に確認があるので、そこでしっかりと伝えておく。
□ つまみは、前述の通り、こちらからストップをかけないと、出続ける方式だが、満腹感を少しでも感じたら、ストップする。
□ もちろん、このタイミングから、お寿司を頼むことも可能。
【飲み物】
□ 日本酒・焼酎・ワイン・ビール等、大抵のお酒はある。
□ メインは日本酒で、季節の日本酒を多数取り揃えている。
□ 焼酎のわさび割が、口もサッパリして、結構美味しい。
□ 大体の場合、日本酒のテーマごとに、3種類ほどを試飲させてくれるので、好みのものを選べるのが嬉しい。
□ ちなみに、持ち込みも可能なので、特別な日にどうぞ。
持ち込みに関し、お店側でも料理にあった銘柄を厳選してるはずで、そこの品揃えで楽しむのがいい。
メニューに価格表示された酒を頼むと「この酒はうちの料理に合わない」と価格のわからない酒に誘導するうなぎ店や、ワインの組合せを含め、完成したフランス料理店に、日本酒を持ち込むようなセンスのない真似は、見ていて、無様だからね。
【お寿司】
□ その日あるネタの中から、自由に選択できるので、まずはネタの確認を。
□ シャリの残量にもよるが、握りだけでなく、丼対応も可能。
【デザート】
□ 波やし自体でデザートを出してもらった記憶はない。
□ 裏技として、波やしの目の前にあるブラックマウンテンというケーキ屋から、お取り寄せが出来る。
□ 手続きは簡単で、店の方にその旨を告げて、ブラックマウンテンに「波やしまで届けて」と言えば、OK‥‥のはず。
【最後に】
□ 丼同様、シャリに余裕があれば、バラチラシのお持ち帰りも可能。
□ 駅までの帰り道、ポン引きに引っかからないようにする。
◼︎ 料理・味

⚫︎ つまみ全般
よくもまあここまで準備しているものだと感心させられるよ。
四季折々、季節ごとに出てくるものは違うのは当たり前だが、個人的には冬をオススメしたね。
冬に出てくるかわはぎの薄造りとうにと白子の入った茶碗蒸し、そして、時折姿を見せる生牡蠣とついつい食べ過ぎてしまうよ。
そして、自分好みをチョイスできるお酒の方が、食欲にさらなる加速度を与えるね。
この日ばかりは「節制」という言葉を「自分へのご褒美」と置き換えてしまうよ。
⚫︎ 握り全般
特別高い技術があるわけでもないが、外連味のない(はったりや誤魔化しのない)、いい寿司を食べさせてくれるよ。
握りの形・加減、ネタとの馴染み、シャリの管理、ネタの質…
寿司の美味しさを形成する数々の要素が揃っているから、いつ食べても、美味しく感じるのだろう。
過剰なパフォーマンスやポーズは必要としない質実剛健さがあるね。
ゆえに華は弱めなので、つまみの方に目を取られて、「ここは寿司よりも酒肴」という御仁もいるが、それには賛同いたしかねるよ。
例えば、うにがてんこ盛りで出てくれば、華があり、人は驚くが、それだけは最高だろうか?
それが最高と思うなら、寿司ではなく、うにを食べた方がいいのではないかと思うんだよね。
こちらはネタを寿司として食べさせてくれるのが、さすがだと思うよ。

確かに、ここより美味しい寿司を出す店はあるだろうし、ここより評価の高い店はあるだろう。
でも、感じ方ではあるが、店を出た時の満足度という点では、ここに及ぶ寿司は殆どないのではないと思うんだよね。
例えば、こことほとんど同じかちょっとだけ美味しい寿司に3万円払うのと、ここで1万円払うのと、どちらの満足度が高いか…
それをわかっている人がいるからこそ、こちらの寿司をいただくために1年以上前から予約をする方が後を絶たないのだろう。
その1年先の予約の先にあるもの…
それが口福である事だけは間違いがなさそうだね。アハハハハッ!
