柏の 晴寿 で、お正月に寿コースをいただきました。元旦から営業している稀有なお店で、この日もテーブルは満席、カウンターもほぼ満席。地元にしっかり根付いて愛されていることが伝わってきます。
前菜は酢蛸、蒲鉾、伊達巻き、鴨肉、黒豆と正月らしい構成。あん肝は濃厚ながら上品で、とらふぐの薄造りは繊細な旨味が印象的でした。特にクエのお雑煮は、身がふわふわで出汁との相性も良く、新年らしい一杯。茶碗蒸しも優しい味わいです。
焼き物はサワラの塩焼き、刺身は鯛とツブ貝で安定感があり、白子の塩焼きは香ばしく冬の味。天ぷらを挟み、最後は寿司七貫でしっかり締まりました。どの料理も丁寧で、素直に美味しいと感じます。新春なので奮発して12,000円のコースにしましたが、大満足でした。
新春の帰省で毎年訪問していますが、いつも変わらず美味しく、店内の雰囲気も明るく元気。 新年の食事を安心して任せられる一軒です。
