ワインペアリングコースをいただきました。今回は2階の個室利用でしたが、1階はカウンター越しに目の前で調理が見られる造りで、次はそちらも良いと思える雰囲気でした。
料理はどれも素材の味をしっかり活かしつつ、コリアンフレンチらしくコチュジャンやテンジャンをアクセントに使った一皿が印象的。香りの使い方が繊細で、白子のソースにはエストラゴンの香りがほんのりと効いており、優しい味わいの中に奥行きを感じました。
黒豚は火入れが完璧で、しっとりとした食感。ソースが2種類添えられており、特にアンチョビやケッパーをフレーク状にしたソースが香り・塩味ともに程よく、肉の甘みを引き立てていました。
鯖の料理は特に印象に残り、鯖とオレンジの組み合わせが驚くほどよく合っていました。鯖ご飯として混ぜて食べるスタイルで、軽やかさの中に旨味がしっかりあり、とても美味しかったです。
全体的に重さがなく、優しい味わいの中に韓国料理のニュアンスが控えめに効いたバランスの良いコース。丁寧な料理が続き、ペアリングも料理に寄り添う内容で、最後まで心地よく楽しめました。
