えんどう豆のスープ
茶道の茶碗で頂く
漆黒の茶碗に緑のスープ
見た目は完全に「抹茶」
それを両手を添えて口に運ぶと
味に奥行きがあるえんどう豆のスープ
調理方法はえんどう豆と「水と塩」
素材の良さを引き出す。
茶碗を器にしているのも香りも一緒に楽しむ為
一見、奇をてらったように見える一品一品
0ベースで調理と向き合いシェフの理論で再構築
そして提供する際にはユーモアを添えて、
見た目、味、知識、香り、右脳がビジビシ刺激される。
