山口県産のどぐろを使用
脂の旨みを切らず
あえて重ねるという藤井大将らしい発想
表面は香ばしく焼き上げられ
身はしっとりとほどけるような柔らかさ
焦がし玉葱と和三盆をキャラメリゼしたソースが絡み
甘みと苦み、そして脂のコクが三層で広がる
和と洋の境界を超えたひと皿
