佐賀県伊万里市にございます、katecuoreさん。
牛を飼育し、その牛を使ったイタリアンのコースをいただけます。
仕込みはしないので、目の前で調理をしているのですが、失敗出来ない工程での湊シェフの迫力はまさに鬼気迫るといった感じでした。
その後の優しい表情と奥様とのやり取りが微笑ましくとても良い雰囲気でお食事させていただきました‼︎
この日の牛は経産牛、12歳の個体で屠畜してから10日ほどたったお肉でした。
・ウェルカムドリンク、嬉野の茶葉とカモミール
・塩とミルクで作ったリコッタチーズと元寇(柑橘類)、出来立てのブリオッシュ
・タルタルと唐津のきびなごのスープ
・パンツェロッティ、牛脂とモルタデッラ、キウイ
・牛頬肉のスープ、新玉ねぎ、唐津のせり、きびなごの魚醤
・レバーとムキタケ、発酵バター、レバーの火入れに牧草の香りをうつしたオイル
・アコヤ貝と牛出汁のパスタ、みかん(にじゅうまる)

佐賀県で構成されたコース、素晴らしい地産地消。
食材を大切に扱う湊シェフの姿に感銘を受けました。
