マイレビさんの評価も高い此方に1か月近く前に予約をし念願かなって初訪問
銀座8丁目という新橋駅から徒歩3分程度という電車・地下鉄でのアクセスも良い雑居ビルの地下1F
18,000円~夜の「お任せ」をいただきました♪
白木のカウンターの店内には清潔感と共に心地よい緊張感が漂います。
タブレットのメニューでお酒を選びつまみの登場を待ちます。
かしかし、いきなり驚いたのですが・・
なんと一番最初の料理が手巻き!!
・鮪突先の手巻き とっさき→背中の頭に近い部分
以下つまみが続きます。

・先付け 海老芋炊きと香箱蟹
・平目 葱巻きポン酢で、刺身は竹炭(塩)か山葵醤油で
・カラスミ 焼いた薄い餅の上に乗っています
・サヨリ 葱、生姜、大葉、出汁醤油であえたもの
・鯖の生ハム 塩漬けを燻製したもの
・鮟肝 60度で1時間調理したものにシャリも添えてあります
・天然 トラフグのちり蒸し 上品なポン酢味

18,000円~のお任せに日本酒で合計26,000円弱でした。
実は一番最初にいただいた、
「鮪(マグロ)突先の手巻き」の衝撃が今も脳裏を離れません・・・
マグロが飛び出ないように下には海苔で蓋をした筒のような形になった丁寧に作られた手巻きで、
シャリもつぶされていなく・・
パリッとした香りの良い海苔にしなやかな赤酢のシャリ、そして脂ののった極上本鮪の甘み
この組み合わせは最高のハーモニーといっても過言でない素晴らしさ!!!
参りました。
初めてだったので願わくば最後にいただきたかった感もありますが(笑)
この順番は昼にはないようですし・・
夜でも最初でない方のレビューがあったりと偶然だったのでしょうか?
ちなみに個人的に今回一番美味しいかったと思う握りはほんのり柚子香る鰆(サワラ)で、今までいただいた中でも1番かと思う脂ののりで赤酢の効いたキレのあるシャリとの相性も抜群!
つまみには「尾崎牛炊き」というサプライズもあり、全て美味しくいただきましたが、
あえて言わせていただければ今回いただいた握りの中では墨烏賊~中トロまでの3カンがほんの少しだけ美味しさ?の感動の度合い?が低かったようにも記憶しています。
がしかし真剣に調理する表情と笑顔のギャップが魅力的な「Fromかねさか」という37歳の佐藤さんとは
またゆっくりお話しさせていただきたく、色々とお勉強もさせていただきたく・・
さらに「一口惚れ」してしまった「鮪(マグロ)突先の手巻き」には直ぐにでも会いたくて(笑)
再訪させていただきたく思います♪
