呼子の海は、風よりも静かに旨さを運んでくる。
出張の昼、初めて“本気のイカ”と向き合った。
透き通った身が皿に横たわる姿は、まるでまだ海の呼吸を残しているよう。
箸を入れた瞬間、ぷつり、と控えめに応える弾力。
噛めば、甘さがゆっくりと立ち上がってくる。
砂糖ではない、熟成でもない。
海が長い時間をかけてつくった、純粋な甘さ。
「イカって、こんな味のする生き物だったのか」
そんな当たり前の驚きが、胸の中でじんわり広がる。
呼子の海風と同じで、強く主張はしないが、一度触れたら忘れられない。
下足は天ぷらで供され、
揚げたての香りとともに、海の力がひときわ濃くなる。
刺身の透明感とは対照的に、こちらは香ばしく野性的。
二つの表情が一杯の定食に並ぶのだから、産地はやはり偉大だ。
呼子のイカは、海の静けさをそのまま甘みに変えていた──旨さとは、時に風景を食べる行為なんだな。
