船場吉兆の流れを汲む北新地の割烹です。北新地の本店に比べてこちらの新店は少し大きいです。
季節がら「節分のお料理」がいただけるということで、息子を連れて30日の夕刻に伺いました。
北新地の節分は堂島アバンザ横の薬師堂の「節分お水汲み祭り」があります。夜には提灯に灯が入り幻想的です。
節分の恵方巻きが最盛期に入っているようですね。活気があります。
①先付…かわいいお猿の入れ物が目を引きます。これは船場吉兆時代のものとか…。一旦手放されたものが縁あって買い戻された、とのことです。
卯の花の和え物(二種)、菜の花、赤貝のぬた、お猿さんの中には鰯の煮物です。節分をイメージして柊の小枝も添えられています。
②椀物…鮮やかな朱色の輪島塗りのお椀です。
蛤のお吸い物、胡麻豆腐が敷かれていますが柔らかく、全然胡麻の臭みがありません。上品なお出汁です。
③向付(お造り)
・平目の薄造り…細青ネギと生ウニを巻いて食べます。
・車海老と烏賊、海鼠腸(新物)
④ご飯もの…お造りが続いたので、とのことで
カラスミ赤飯…お赤飯は薄味でカラスミの塩気でいただきます。
⑤強肴(?)
寒鰤のしゃぶしゃぶ…脂がよく乗っています。
⑥鉢魚…壬生寺の厄除俸禄焼…目の前で木槌で俸禄を割ります。

「和食を提供することは食材だけでなく、器や添え物で季節を表すことも重要なんですよ」とご店主。深いですね!!!
今日は昼間は結納のお食事会も入りご盛況とのこと。このお料理をいただくと納得、納得、大納得です。
来月か再来月、落ち着いたら朝ごはんの提供も考えてみたいですね、とのこと。これは大朗報ですね。
