こちらに来たら必ず来たくなる、鰻の名店。
友人を連れ、新幹線に乗ってランチに食べに来たこともあります。
特筆すべきは、鰻の下処理の素晴らしさとお米。
鰻は外はパリッと中はフワフワに焼き上げるため、ある程度鰻の大きさが必要なのですが、下処理が素晴らしく、骨があたることは一切ありません。このフワッフワな食感は他ではなかなか味わえないと思います。
また米はその時々、店主が今一番美味しいと思う産地の米を毎日使う分だけ精米し炊き上げており、艶っ艶で一粒一粒が立っており、米の香りと旨味がこれまた素晴らしい。
基本、一人で切り盛りされているので、多少時間かかることもありますが、こだわりの日本酒が何銘柄かあるので、肝焼きや極上の塩焼き、うな丼用に擦られた擦りたての山葵を肴に、丼が焼き上がるまで飲んでいる時間もまた楽しい。
間違いなく、私の中で一番の鰻です♪(´ε` )
