今回は「紀尾井町 三谷」総料理長の高野さんに握って頂きました。
今回頂いたものは、

○ 煮蛤の生このこ餡掛け
○ ダヴィッド クヴルール 2007 ブランドブラン
このこに軽く火が通っただけでシャンパンとの相性が良くなりますね。全然生臭くありません。
○ 本鮪 (噴火湾産 定置 105.6kg)
○ 雁木 発泡純米 活性にごり本生原酒
ふわっと空気を含ませた鮪と微発泡の日本酒が滑らかに口の中で拡がりますね。
◎ 蒸し鮑 (大原産 黒鮑)
○ ドメーヌ・ジョマン バタール・モンラッシェ グラン・クリュ
蒸し加減が良いですね。肝のソースは絶品です。ワインとの相性も良いですが、やっぱりご飯と混ぜるのが一番ですね。

富津産の鱚はふわふわで雲丹の風味が香って・・、揚げた子持ち蝦蛄の食感と甘味が・・、ビールが飲みたい!

○ 英君 夏吟醸
濃厚な組み合わせなのにあっさりしています。これは日本酒ですね。

ぼぼ反則技ですね。不味い訳がありません。

◎ 星鰈の昆布締め
星鰈の繊細な香りを残しつつ昆布でうっすらと締めてあります。少し熟成されて歯応えが柔らかくなった所は厚みを持たせて補っていますね。シャリとのバランスも良く絶品の握りです。

JR中央線 四ツ谷駅から歩いて3〜4分のところにあります。
毎回毎回美味しいのですが、料理のクオリティの高さが何処まで進化するのだろうといつも感心します。
今回の特筆すべき一品は、南紀勝浦の本鮪の腹の部分を醤油で和えたものとルロワのバタールモンラッシェとのマリアージュでした。
この時期にしては香りも脂の乗りも良い鮪の強さに、状態が良くブーケ強いワインが負けておらず更に鮪の香りを引き出していて驚かされました。きっと、僅かに使用する醤油がポイントなのでしょう。
もちろん、今回も全て美味しかったのは言うまでもありません。
