奈良は大和西大寺にある焼鳥店、らくださんです。
そういえばそろそろ新規オープンしてから1年やなぁ、と思い訪問しました。
マスターは「正確には1周年まであと数日あります」とのこと。
あ~~、でもこの1年ですっかり地域に認知されたんじゃないかと思います。
焼き鳥の安定したウマさはホンマもんと思います。
初のカウンター着席です。広めの白木カウンターで高級感あります。
今日は熱燗(みむろ杉)スタート。濃厚辛口のお酒で燗にすると風味がグッとキます。ウマし。
いつもながらお通しの鶏ハムチョジャンたれ風がウマし!夏でも冬でも良いですね。
焼鳥は焼き上がりにそれなりに時間がかかるので、スピードメニューとして土手煮とシーザーサラダを注文。
相変わらず一品のサイズが大きいですが、今日は二人なんで大丈夫でした。
土手煮は白ご飯にもあいそうです。味噌汁以上煮こみ未満の濃さが絶妙です。
シーザーサラダはトッピンのベーコンを直前に炭火で焼いてくれていました。良い香りでしたね。
調理の姿が見られるのもカウンターの醍醐味であります。
焼鳥はいつもほぼおんなじメニューを注文してますね。
ねぎま、せせり、皮、ナンコツ、こころ⇒以上塩で
肝、つくね⇒以上タレで
塩焼きは塩が弱めで鶏肉の部位ごとの香りや味わいの違いがよくわかります。焼きも肉が大きいので柔らかめでジューシーです。やはりオススメはせせりですね。一番味が濃くて歯ごたえもちょうど良いです。
タレ焼きのタレも甘さ控えめで、以前伊豆でたべた金目の煮付けのタレのように色も味も濃厚ですが塩味が薄めという代物です。
シメもいつも通り焼きおにぎり。表面がいい感じにカリカリのおこげです。
今日もおいしくいただけました。
