千葉県八千代市、東葉高速線の勝田台駅の北口から、路地裏の道を八千代高校に向かって歩いて行くと右手にあるお鮨屋さん。
約1ヶ月前の予約のうえ(予約は一緒に行った友人に頼みました)、12月下旬の土曜日夜19:00に2名で伺いました。
外観佇まいはまさに大人の隠れ家といった雰囲気、内観も清潔感が漂う洗練された和の空間です。
入口で靴を脱いで店内に上がります。
カウンター席は事前予約の方のみで、メニューはお任せコースのみとのこと。
大将が厳選した素材にこだわり抜いた技を駆使した鮨を頂けます。
18000円のコース + 追加で雲丹、鯵、締め鯖の握りと干瓢巻き + 日本酒4合とハイボール1杯 一人約¥27000。

炙りや焼き、しゃぶしゃぶの湯通しからすべて目の前で見れるので、楽しさで時間があっという間に過ぎました。
良質な素材はもちろんのこと、熟成具合や塩、山葵、海苔、山椒、さらには食器に至るまで、きめ細やかなこだわりがうかがえて、味覚も視覚も嗅覚、聴覚まで、全てにおいて楽しむことができました。
そして温度の高い赤酢のシャリも、鮨種とのバランスやほどけ具合も絶妙でした。
日本酒も女将さんのこだわりを感じる素晴らしいラインナップでした。
お鮨とのバランス、燗の温度調節、提供の順番等々、日本酒をこよなく愛し常に勉強を欠かさない姿勢が見て取れて、頭が下がる思いとともに、提供いただく側として本当に有難い限りです。
