昨年はほとんど行けなかったので、今年は早めに行っておこうと今年初訪問!
すし岩瀬、パワーアップしてました
以前から全般的にネタが肉厚で大きめだが、バランス良いシャリ、シャリの味とパラパラ感も私の好みでしたが、各お料理手間がかかっている
肉厚に切ったネタをこれだけバランスよく握れる腕は流石です
お詫びとしては結構上品な味でお気に入りだった、先付けの「イカの印籠詰め」撮り忘れました
干瓢とゴマとシャリが入っていたと思います
温菜のたらの白子は、シャリの上に白子の焼き周りは裏漉しした白子とを鰹出汁で解いたものですが、白子やシャリが美味しいのは名店としては当然ですが、鰹出汁が秀逸。しっかり印象を残しつつ白子とシャリとマリアージュされてました
大間のマグロは、私のような素人には聞くだけで美味しく感じてしまうものですが、やっぱり美味しい
特にカマトロ!と思いましたが、漬け、中トロ、トロたく全て秀逸!ネタも良いが腕も良い、こちらのトロたくを握りでいただくのが私のお気に入り
鰤はプルプルの食感と程よい脂。大好物な鰤ですが、握りも、そして素材の秋を引き出すハラス焼きも素晴らしいお味でした
温菜のクエの茶碗蒸しも美味!こちらとご飯だけで一食になるくらいの満足度!

カワハギ(握り)生の肝と煮た肝 食感が楽しめます。何よりカワハギ、そんなに肉厚に切って良いの?というサイズでなかなか食べられない贅沢さ。一貫で高価さを味わえる!?
穴子も白焼、肝焼き、握り、稲荷寿司といろんな形で楽しめます。
稲荷寿司は、穴子の煮汁が油揚げにしっかり染み込んでいておすすめ!終盤なので、食べない方もいますが、是非食べていただきたい逸品!
握りはもちろん、先付け、温菜、箸休め、口直し全て手間がかかっており、お店のチームワーク感を感じる。
腕はもちろん!若手の方を厳しく指導する大将にも愛があり、ついニコニコしてしまう雰囲気を作る。
仕込みや裏方仕事をしている方が丁寧に料理するからこその味。
そして江戸前感満載の大将とサーブしてくれる方々、でファミリー感ありつつ顧客サービスレベルの高い敷居の高さを感じさせないアットホームな雰囲気を作ってくれる。
とても居心地の良いお店でした。
