吉乃さんの跡に入った新進気鋭、若い大将のお店!
行ってみたかったお店にタイミング良く、お声かけてもらえました\(^o^)/
今回は貸し切り会、遠慮なく写真撮れました♪
もちろん大将には確認。
「自分も見たりするので、ウチだけ隠すのはフェアじゃない」
「今の時代SNSで情報を知るので、むしろ宣伝になります」

先ず最初に酢飯をあわせます。
そして、あわせた赤酢と海苔だけで頂きます♪
シャリの米は女神の微笑みって言う大粒なお米を、大垣の湧き水で炊いたそうです。
海苔は全国で3店しか使ってない、分厚くてパリッとしてる特注品!
最初は海苔は激ウマだけど赤酢のシャリは尖ってる印象…
でも、落ち着いてからネタと合わせるとメッチャ良くなってました!(∩ˊ꒳ˋ∩)

『純米吟醸 からはし 山田錦』
フルーティでグイグイいけちゃいそう(o^^o)
●千葉県銚子の金目鯛 刻み昆布と昆布出汁
ねっとりとした金目鯛。
淡白な味わいだからこそ、昆布の旨味が活きてきますね!
●北海道余市の鰤の藁焼き 山葵味噌添え
脂の乗った鰤をタタキにして頂きます♪
藁の香りが鼻腔をくすぐって、鰤の旨味に彩り添えます。
山葵味噌が素晴らしく合って旨し!(´∀`*)
●北海道余市のあん肝のパテ
変化球がやってきました!
あん肝には沢庵と八丁味噌を使って、シャリのおこげをディップして頂きます♪
カリッとしたおこげとコクあるあん肝、こんな食べ方面白い!
でも…バランス的にあん肝が残りますね~(;´∀`)
残ったあん肝、シャリでも食べたいな~って皆で話してたら…
シャリを丸めてポンポンって、皆のあん肝の中に入れてくれました!
これは一同歓喜!\(^o^)/
もちろん、とても美味しいです!

『大那 超辛口 純米』
どっしりとした辛口、魚の旨味を引き出す飲み口♪
●長崎のクエと信州の松茸の焼き物
クエは30キロ級で3週間寝かせた代物!
クエの脂のトロッとした部分はエンガワですね♪
松茸は今季初!(o^^o)
贅沢に使われてて食べ応えありました♪
さて、ここから握り。
地元の近所、稲沢市で栽培されてる金時生姜を使ったガリ。
普通の生姜の4倍の効果と辛味だそう。
でもね、全然辛くなくてそのままパクパクいけちゃいました♪
これだけで日本酒イケるな~!
『日高見 純米 山田穂 秋あがり』
山田錦の母親にあたる"山田穂"で醸したお酒。
めちゃレアなお酒みたいでお鮨に合うそう♪
●大トロ
青森の大間の三厩の一本釣りであがった鮪です。
産地を表記した札が目の前に置かれてます。
さすが大トロ、口溶け&脂の乗りが最高!
「みんまや」って呼び方すぐ忘れる~(´△`)アァー
みんかわやって覚えちゃって…笑
隣の方と、
「で、これなんて読むんでしたっけ?」
って突然クイズして盛り上がってました!( *´艸`)
●コハダ
熊本の天草産で、1週間寝かせた一品。
●シマアジ
高知の宿毛産、天然モノだそうです。
●ボタンエビ
北海道、増毛産のボタンエビ。
日本で1番ボタンエビが取れるのは増毛だそうです。
プリップリでもネットリしてますね!(*´∀`*)
●カワハギ
ドヤ顔で手渡し!笑
手渡しじゃないと崩れちゃいます♪
カワハギは長崎産、上に乗るのはネギと生姜をすり下ろした肝ソース!

もう口溶け半端ない♪

蟹の甲羅で押し寿司!
器と一体で蟹になってますね~(´∀`*)ウフフ
新潟の解禁前の勢子蟹と北海道産のイクラの蒸しの押し寿司で、
味付けはイクラの塩分のみだそう。
ほんの少し蒸してあってイクラは半熟状態…
これが堪らなく旨い!
鶏卵の半熟は生より旨い、イクラは…

愛知県の美浜の塩で頂きました♪
大トロ、中トロ、赤身と食べ比べましたが、中トロが一番バランス取れて好き♡
●雲丹シャリの雲丹乗せ
一箱30000円ほどの北海道根室産の雲丹をシャリと和えて、その上に雲丹を乗せた贅沢過ぎる一品!
ドヤ顔で渡されるのも分かります♪(*´ェ`*)
コレは雲丹よりも雲丹!(о´∀`о)
異論は認めない♪
日本酒ペース上がってきました!
『岩清水 Origine オリジン 五割麹仕込み 生原酒』
白ワインみたいなフルーティな風味で、これまた飲みやすい♪
●マグロのコラーゲンスープ
マグロ節の出汁のスープ、トロッとしてるけど意外とあっさり!
でも、ちょっと魚臭いかな~(^^;)
口直しに良いですね~♪
●ノドグロの炭焼き
石川県輪島産のノドグロを備長炭で炭焼き♪
しかも両手で持って、焼いてる様を魅せてくれるパフォーマンス!
楽しませてくれますね~(=´▽`=)
ドヤ顔で手渡し。
握りは、シャリが少なめでネタが分厚く大きめでアンバランス!
でも、これくらいが丁度良い♪(*´艸`*)
ノドグロの旨味が炭火で凝縮されてて、実に美味しいです!
●穴子
長崎県対馬産、酒と水だけで炊いた穴子だそうです。
穴子ってこんなにフワッフワになるんですね~!
口の中でとろけます♪(¯﹃¯*)
●玉子焼き
何これ?デザート!?(●ω●;)
羊羹みたいなビジュアルです!!
名古屋コーチンの卵を低音調理し5時間寝かせて作る、とても手間のかかった玉子焼きだそうです。
これを食べたいが為、遠方からみえるお客さんも居るそうですよ♪
味は…なんとも表現しようがないお味!
食べたことが無い未知の食べ物です(^^ゞ
気になる方は是非訪れて食べてみて下さい!(^O^)/
3時間近くかかりましたが、あっという間の桜田ワールド!
