東京都、麻布十番駅1番出口から徒歩3分にあるお店です。
韓国出身の大将は漫画「将太の寿司」に憧れて鮨職人を目指されたとのこと。
将太の寿司→職人ルートは他にも1名知っています。私は読んだことありませんので内容は知りませんが、マジメな鮨道な話ではなくなんかハチャメチャなストーリーらしいですが、なぜそこから鮨職人に憧れるのでしょうか(笑)
予約時間ちょうどにドアオープンで店内へ。
ストレートのカウンターが7席程度でしょうか。余分なものがほとんどないシンプルで高級感漂う店内です。
この日は韓国からのお客さんが半分程度でした。
まだ若い感じのキリッとしたイケメン大将。日本語も流暢です、韓国語と使い分けて接客されてるのは凄い。
まずは酢橘サワーで喉を濡らします。
大将曰く、鮨を食べて欲しいからおつまみは少な目ですとのこと。
最初に3品つまみ。特にきちんと温かい状態で提供された毛蟹が美味しかった。
握りへ。
最初は鱚の昆布〆。
美しいフォルムです。1貫目に鮨ネタとしては地味なこちらを持ってくるのは自信の表れでしょうか。
シャリの温度、固さ、酢の感じ、ネタとの一体感がお見事で旨い鮨。めちゃくちゃ自分好みでした。
頻繁に何度も何度もシャリを交換し、常にベストな状態をキープしているように感じました。
お鮨もメインに食べて欲しいとい大将の考えがよく表れています。
当然ですが魚の質もかなりの高さではないでしょうか。
あえて口に出すことはありませんが、寝かしたり〆たりと江戸前仕事も素晴らしく。
提案して頂いた日本酒もどれも良かった。
せっかくなので追加も頂き大満足。
高級鮨なので頻繁には伺えませんが、機会があれば再訪してみたいお店です。
