こちらの料理人の方は津川さんという方です。
美登里寿司圓時代から食べた事のある、素晴らしい料理人の方です~
こちらに移ってからは、初めての訪問です。
店内は、カウンター席中心の落ち着いた雰囲気で、デートや接待等どんなシチュエーションにも使えそうなお店です。
料理は基本お任せコースになるようです。
素材にとことんこだわった、新鮮な魚を独自の方法で素材に合わせて数日から数週間熟成させた、濃厚な味の旬のお刺身が食べられます。
それぞれの素材の味を最大限生かした熟成感は、下に粘りつくようなうまみが食べた事のない幸せを運んできます。
ウニも幻のウニと言われる九州産の赤ウニです。
初めて食べますが、こんなに美味しいウニがあるのかと感動しました。
すべての料理がグレードが高くて素晴らしい仕事がされています。
