ほんとに美味しいひとときでした。
最初のお刺身。
昆布締めで締められた海老が絶妙な甘味です。
太刀魚は炙った香ばしさが身の味と調和。
アジは海苔巻きになって嬉しい感じです。
マグロ、ホタテ、赤貝もとても良いもので
それぞれの食感と味を楽しみ、お酒を飲みます。
前回も頂いて美味しかった焼き白子に
旨みの塊のよう芳醇な本ししゃもの焼き。
煮たこは、とても柔らかく旨みが詰まってます。
そして美味しい出汁の茶碗蒸しを味わって
最後にお寿司をいただきます。
牡蠣のお寿司を初めていただきましたが
とても美味しいです。シャリがあってこその
牡蠣の美味しさはまた違って感じました。
海老の寿司、直前にボイルされた海老は
絶妙に熱が入り外側と内側で食感が違います。
頭の部分は、別に素揚げで味噌の香ばしさを堪能。
コハダ、関アジ、ホッキ貝に玉子。技の高さがわかり
とても美味しいです。静かに堪能します。
個人的にとても好きなお寿司の鉄火巻。
トロより美味いんじゃない?という感じの
香りの良い赤身でパリッとした海苔の仕上げ。
とても満足。ワサビがほんの少し強めなのが良い。
最後にかっぱ巻きをいただきます。
細切りのきゅうりに胡麻の好きなタイプ。
お茶をゆっくりいただき、仕上がりました。
一緒に食べた奥様は、トロたく、ウニとシャコを。
シャコにはツメが塗ってあり美味しそうでした。
今日も江戸前の美味しさを堪能いたしました。
