三重県で日の出さんと言えば、蛤で有名です。
そして、なかなか予約が取れないお店としても有名。。。特に4月~6月にかけては
普通には訪問ができないお店。
そんな敷居の高いお店に、6月の週末「日の出」さんの常連であるマイレビさんに
お誘い頂いて伺う事ができました。
梅雨入り前が一番蛤が美味しい時期だそうですが、まさに一番良い時にお誘いいただいた
ようで、貝好きとしては本当に感謝しかありません♪
既に今年、この時ばかりでなく訪問されているようで、毎年この時期に何度も通われるほど
美味しい蛤と聞き、期待が高まります。
場所は桑名の駅から南へ桑名城跡に向かう途中にあり、七里の渡しが側にあります。
七里の渡しの文字で。。。歴史よりも黄な粉たっぷりの和菓子を連想する私は。。。
自分でも食いしん坊だと思います(笑)
到着時この日は結構な雨が降っていましたが、駐車場への誘導等丁寧に接していただきました。
お店は老舗の貫禄が漂っています。
通していただいた部屋の天井も舟屋造りになっていて、とても興味深い。
お料理は、蛤鍋のコースに焼き蛤をつけた物のようです。
口取り
ハマグリととびこ・稚鮎 枝豆・酒盗・ネギのマグロハム巻き・玉子 生姜・おぼろ豆腐
蛤鍋
この時の蛤は3年ものでちょっと小さいとの事でしたが、その分個数があったようです。
スダチ・柚子胡椒・一味でいただきました。
3回も蛤をたっぷりといただけます。小ぶりとは言うものの十分大きくぷりぷりです。
ここ数年、蛤だしを使ったお料理で感嘆した事があったので、こうして蛤を食べると
感慨深い。。。濃厚な旨味が幸せ♪
1皿目よりも2皿目、2皿目よりも3皿目と濃厚になっていきますね♪
口直しに 葛切り 黒胡椒をかけていただきます。
あっさりとしていて、つるつるとした食感でさっぱりします。
焼き蛤 鍋よりもやはり濃厚になりますね。美味しい♪
蛤の出汁がしっかりと出た鍋で作られた湯豆腐 豆腐とネギ
生姜醤油でいただきました。
蛤の磯部揚げ宮古島塩と天つゆかがついていましたが、塩が美味しかったです。
こちらに使われている海苔は、浅草海苔。
浅草海苔は産地名でなく、種別名とは知りませんでした。
某TV番組で見ましたが、養殖なかなか難しいようですよね。
まだしっかりと出汁があります。1つの鍋ではラーメンを。
もうひとつの鍋では、雑炊が作られました。
ラーメンを日常生活ほぼ食べないので、ラーメンの感想はやめておきます。
雑炊は、旨味たっぶりなので間違いなく美味しい♪
結構お腹いっぱいになっていましたが、せっかくなのでお代わりもいただいて
最後までしっかり蛤を堪能いたしました。
途中で、桑名の蛤についていろいろと教えていただきましたが。。
2つの川からなる入の形で育つ桑名の蛤は、かなり貴重なようです。
潮が荒く殻が厚くなる桑名の蛤は、碁石の白になるそうで・・・
この白石は高級品!
他の蛤との殻の形を見ても、色や縞を見ても歴然と違う事がわかります。
デザートは、マンゴーソースのかかった大内山牛乳のブラマンジェ
優しく甘くて美味しかった♪
なかなかここまで蛤だけを食べる事ってないので、また来たくなってしまう事が
よくわかります。
老舗と言えど蛤をこれだけ確保する事がどれだけ大変か、お話を聞くと苦労が伺えますが
また来る機会がある事を願って、のれんを末永く守っていただきたいと思います。
