寿司会席が久しぶりなので暖簾をくぐって扉を開け
カウンターに案内されたら期待値がマックスです
天冨良の板前さんと鮨の板前さんの掛け合いが楽しかったです
食事もお酒もお話も楽しませようとする気持ち伝わってきました

【コース構成】
■座付き ふぐ皮の煮こごり
■小鉢
小鉢3種(海老の練り物、黒豆、焼きたらこ)
■天麩羅 車海老、頭、アスパラガス
(しっかり海老! 頭の部分がこんなにさっくり軽くなるなんて。アスパラガスも穂先から食べて欲しい)
■造り 熊本の馬刺し
(お造りが馬刺し!)
■天麩羅 矢生姜とさわらの若狭地
(矢生姜で口をさっぱりさせてから薄衣で揚がった白身のさわらを海苔のソースで)
■中皿 ささみのたたきのサラダ
(しょうゆこうじと酒粕のドレッシングが鳥の旨味を引き出してる。アイスプラントの食感が面白い)
■天麩羅 穴子煮おろし
(ホックホクの穴子天に甘い天つゆを吸わせた大根おろしをかけて。よくある1本ものを箸で切ってホカホカだと量が多くて飽きるでしょ?適量にしてます!との心遣いからの1品。柚子と魚粉とおろしと合わせて穴子のいい所だけを引き立てていた)
■強肴 サーモンのすきみ 小丼
(1口大の赤酢のシャリにサーモンのすき身。甘いサーモンにシャリの旨さがひきたつ)
■天麩羅・熊本茄子
・帆立
(熊本茄子 茄子なのに技術なのか特別に旨い。あとから茄子を見せてくれたけど見たことの無いぐらい大きかった。)
・万願寺とうがらし
(鯛のすり身がはいった万願寺とうがらし。万願寺の酸味と苦味の美味しさにすり身が甘みを加えてバランスが最高。)
・帆立
(王道のネタながら絶妙な揚げ具合。1秒毎に身に火が入るからすぐに食べた。)
■箸休め 枝豆と白キクラゲの茶碗蒸し
(枝豆しっかり感じられるてキクラゲので食感が楽しい)
■天麩羅 馬糞ウニといくらキャビアの天巻き
(紫蘇に雲丹をのせて天麩羅にして赤酢のシャリとイクラとキャビアをのせて巻いた贅沢な天巻き。複雑な組み合わせで美味しいに決まっている逸品)
■寿司
・こちをすだちと黒塩で
(淡白ながら旨味の強いこちをすだちに硫黄の香りのする黒塩で)
・すながつお
(食べたことのない食感と旨味。これが鹿児島のすながつお。今回感銘をうけたネタ)
・甲いか からすみをのせて
(ねっとりとしたイカにからすみが華やかに)
・北海道のブリ
(ハラミの脂ののった部位。溶けるような脂の甘さに舌鼓できるネタ)
・大とろ
(美しい仕事のされた大とろ。ピンクに輝くその姿は神々しいぐらい。溶ける脂にマグロの酸味と旨味を感じる間違いないネタ)
・雲丹
(塩と醤油の両方で。極上の雲丹はもう味と香りが段違い)
