2021年7月オープン。数々の一流ホテルで総料理長を務めた稲葉氏が開業した話題の日本料理。
食べログ日本料理百名店にも選出され、予約して2名で伺いました。
この日は個室の予約が多く入っていたようで、広いカウンターが貸切状態でした。なんという贅沢でドキドキします。
夜は38,500円のおまかせコースのみ。
ソムリエの方もいらっしゃるので、シャンパンで乾杯した後は、お料理に合わせて日本酒をペアリングしてもらいました。
・先付 甘味トマト、鮑、蓴菜
もみじが飾られた器の中には、甘いフルーツのようなトマト。蓴菜と鮑でさっぱりと。
・稚鮎の唐揚げ、山椒ソース
サクサクに揚げた稚鮎に山椒のソース、山椒がいいアクセントに。
・名物とりゅふ蕎麦
くるくるとモンブランのように巻かれた蕎麦の上にはポーチド鶉卵。目の前でトリュフをふんだんに削ってくれます。トリュフの香りが漂い、ポーチド鶉卵が濃厚で幸せ気分。
・アイナメの椀
美しい椀の中には、筍、塩胡椒して炙ったアイナメ、炭の香りと敢えてしじみ貝を入れないしじみ汁の香りが楽しめます。
・淡路の赤雲丹
関東ではなかなかお目に
かかれない赤雲丹。濃厚でとろけます。
・イサキの藁焼き 霜造り
目の前で藁焼きのパフォーマンス。これはなかなか見る事がないので印象的でした。脂ののったイサキに醤油漬けした行者ニンニク、福井の辛子を添えて。
・淡路の天然とり貝の炙り バター添え
大きな天然物のとり貝。ワタ付きで炙って、バターを添えて香ばしく。とり貝をこのようにしていただくのは初めてで新鮮でした。
・ホタルイカの串焼き 味噌漬け
味噌漬けされたホタルイカの串焼きはお酒が進みます。
・賀茂茄子の丸焼き 生姜餡
香ばしく丸焼きした賀茂茄子、中はふわふわで、生姜餡がいいアクセントに。
・甘鯛の油蒸し
たっぷりの野菜とコクのあるタレで中華風に仕上げた逸品。
・和牛シャトーブリアン 付け焼き
醤油ベースの付け焼きで、やわらかく絶品。ナイフでカットしてもらいましたが、ナイフがいらないくらいで、男性にはカットせず提供されています。オレンジ卵をつけて美味しくいただきました。
・釜炊き新生姜ごはん
目の前の釜で炊かれた生姜ごはん。生姜の香りがふわーっと漂い、ふっくらと炊きあげられています。
・毛蟹、フカヒレ、餡スープ
とろとろのフカヒレと毛蟹がたっぷりの贅沢なスープ。最初はそのままいただき、ごはんを入れておじや風に。
・甘味
ほうじ茶のパンナコッタ、黒蜜、マンゴー。
ほうじ茶パンナコッタの中には大好きなわらび餅が入っていて嬉しい。
・山椒のガトーショコラ、お抹茶
茶漉しでお抹茶を点てていただきました。ほっこりします。
旬の食材をふんだんに取り入れたおまかせコースは最初から最後まで感動。木のぬくもりを感じるカウンター席、目の前で繰り広げられるパフォーマンス、お料理に合わせた日本酒のペアリング(乾杯はシャンパン、お肉の時は赤ワイン)、独創性溢れる料理、味、香り、あたたかい接客、全てがパーフェクトでした。記念日にピッタリです。なかなか行けないけど、またいつか伺いたいです。
