あの焼肉トラジの最高峰、新業態のプロの焼き師によるフルアテンド制の高級焼肉店として2022年オープン。トラジの肉なら間違いない!と楽しみに伺いました。新橋の駅から程近く、階段で地下に下りるとスタッフの方が笑顔でお出迎え。黒を基調としたシックでスタイリッシュな雰囲気で、席はゆったりとした半個室になっています。
クローゼット付きで、コートやバッグも収納出来るのが嬉しいですね。

ソムリエ厳選のワインも取り揃え、泡1杯、白1杯、赤3杯の5グラスでいただきました。先ずは泡で乾杯。
ワインは分かりやすくボトルと写真撮ったので、詳しい方は分かるかと思います。
そして担当の焼き師が本日のお肉と野菜の説明があります。自社牧場トラジファームで育てた黒毛和牛のヒレや、茨城の希少な牛、飯村牛など全て雌牛を使用。肉だけでなく、野菜の産地や生産者にも拘りがあります。
コーススタート。
・牛テールと松茸の土瓶蒸し
土瓶の中にはとろとろに煮込まれたテールと茸。
先ずはおちょこでスープをいただき、濃厚な味わいにうっとり。とろとろのテールも美味しくて、ほっこりします。
・梨のタルタルユッケ~キャビアのせ~
なんとユッケの上には細かく刻んだ梨(幸水)とキャビアが!ユッケと梨って初めてでしたが、これが意外にも会う!キャビアとの相性も良かったです。
・肉寿司
飯村牛イチボの旨みをぎゅっと閉じこめた肉寿司。たまりません。
・タンの赤ワイン煮込み
とろとろに煮込まれていて濃厚な味わいに、ワインも進みます(笑)
・厚切りタン
アメリカ産のタンだそうです。脂身がしっかりとして、やわらかく、濃厚な旨み。酢橘と山葵で。山葵は静岡の山葵。
・厳選赤身の厚切り2種
贅沢な厚切りのハラミとヒレ。ハラミは赤身の旨みが濃厚で、やわらかい。鬼おろし、辛子味噌、蓮根と共に。ヒレは自社トラジ和牛で、こちらもとろける旨さ。
鬼おろし、にんにく、沖縄の希少な塩、赤蕪とともに。焼きはミディアムウェルで。
・季節の焼き野菜2種
赤蕪、蓮根。お肉だけでなく、野菜も美味しくて、連れが赤蕪が印象に残ったって言ってました。
・無花果のサラダ
おろし玉葱を混ぜていただきます。さっぱりとしたサラダで箸休めにも。
・シャトーブリアンステーキサンド
分厚くて、見るからに美味しそうなシャトーブリアンをカリッと焼かれたパンにサンドして、シャリピアンソースでいただくスペシャリテ。本当にやわらかくて、甘味のあるシャトーブリアン、最高です!
・季節の水キムチ
山形の完熟ラ・フランスを水キムチにしちゃうとはオシャレ。さっぱりとして箸休めにも。
・本日タレ焼き
飯村牛のモモのタレ焼き。やわらかく、なめらかな味わい。タレで美味しくいただきました。
・サーロインのトリュフ焼きすき
脂身の多い極上サーロインをさっと焼いて、濃厚な卵黄にダイブ。そこへ贅沢にスペインの黒トリュフを削ってもらい、トリュフの風味漂う贅沢なサーロインに感動!そこへ一口サイズのごはんが登場。ごはんを入れてスペシャルTKGに。
