東京オリンピックのマラソンが札幌開催と決まった時に観戦がてら札幌に行こうと決めました。札幌に行くなら鮨!ということですすきのにあるこちらに決め、何ヶ月も前に電話で予約しました。しかしその後の感染拡大でマラソンは無観客開催、まん延防止措置で飲食店の営業は20時まで。さらに酒類の提供も無くなりました。予約の何日か前にこういう状況だが予定通りで良いか、ご丁寧に電話を頂きましたが、予定通り土曜の18時に伺いました。
10分ほど前に着くとカウンター席8席4組のうち2番目、一番右の2席に座りました。鮨通でも無いので他のお店をよく知らないですが、入口から落ち着いた雰囲気でつけ場の奥には向日葵が飾られてました。
飲物は炭酸水をお願いしました。18時丁度に大将が登場し、山葵を擦り初め、満席でスタートです。

どれも完璧に計算され尽くした料理です。素晴らしくうまい。肝ソースは濃いソースで、焦点がしっかり定まった味。シャリは赤酢でやや強め。シャリの炊き加減は固め。一粒一粒がしっかりしてます。

寡黙な大将が黙々と握り、女性の方がシャリを運んだり、海老の殻剥きをしたりサポートしてコースは進みます。
大将が握りを置くたびにすっと沈み込みます。口に運ぶとほろっと解けます。そしてその度に唸ります。ごま、あさつき、すだちなど繊細な仕掛けが仕込まれ一つの握りでいくつもの味を楽しめます。
うまい\(^o^)/
ガリは新生姜とのことですが、酢がきっちり効いてます。
味噌汁は甲殻類が前面に来ますが、色々な魚介から出汁をとっているとの事。鶏屋の鶏スープばり。うまいです。
一通りが終わりました。何となくノンアルだとうまかったという余韻を楽しみたくなり追加はせずに〆ました。
全体的にすごくしっかりした仕事、しっかりした味のお鮨でした。秀逸でうまかったです。コロナが一段落してお酒を飲みながら楽しみたいお店です。大将も酒は売るほどある、と言ってました(笑)ご馳走様でした。
