初めての金沢出張。金沢は美食の街!何を食べるか迷いに迷い、おでん食べログポイント全国一のこちら、竹千代さんに予約の電話をすると運良く空いてました\(^o^)/6月の火曜の夜18時予約しました。
到着が少し遅れてしまいました。先客3名はスタートされていました。直ぐに追いつくべく、ビールを注文。キリンラガーの中瓶でスタートです。
ご主人お一人のオペ。弟子はとらないそうです。メニューはお任せです。同席させていただいたのは北海道から旅行で来られた男性お一人と女性お二人でした。
和食ですが、これがおでんか?というのが正直な印象。おでん鍋はなく一品ごとに丁寧に温められ、出汁汁が掛けられています。その品毎にかけ汁も味付けされ、どれも素晴らしい出汁の効いた汁と具の相性は完璧。思わず唸ってしまいます。
ご主人は話してみるととても気さくな感じでした。
金沢にはたくさん美味しいものがあると思いますが、間違い無くこちらも訪問すべき名店に数えられると思います。ご馳走様でした。

⚪︎自家製胡麻豆腐の冷奴〜兎に角胡麻が濃い
⚫︎鶏団子〜軟骨コリコリ、鶏臭い出汁は塩味薄くコクがある
⚪︎ガンド(ぶりの手前)と大葉、人参、茗荷、ブロッコリースプラウトの和物〜醤油といえば醤油味ですが、素材をスプラウトサイズに細かく刻み、上品で繊細な味です。うまい\(^o^)/
⚫︎なす、車麩、新玉ねぎの白味噌仕立て〜甘い汁、白味噌のコクが素晴らしい\(^-^)/なすもうまい
⚪︎からすみ3年もの4年ものとくじら(お腹)、サバの粕漬け、甘エビの肝和え〜からすみはしっとり、クジラは脂がうまい\(^-^)/どれも塩味抑えめ。サバは塩味の無いへしこで旨味たっぷり。甘エビは肝の味が素晴らしい
⚫︎自家製蒟蒻〜蒟蒻なんだけど鼻に抜ける香りと出汁、ちょっと甘い。蒟蒻芋そのままを食べているような存在感があります、うまい\(^o^)/
⚫︎自家製かんもどき〜コーン、木耳、ごぼう、豆腐、おから。煮汁とかけ汁は別物にする手の入れ方。椎茸みたいな出汁出まくりの素材は使わず上品に旨味を出すのは凄い
⚫︎ニシンと切り干し大根〜ニシンはアラスカ産だそうです。濃すぎない甘辛煮と切干大根のシンプルな組合せ。
⚪︎生姜ご飯と味噌汁、漬物〜お焦げはパリパリ、針生姜がほんのり効いたご飯。味噌汁はパンチの効いた塩味のある白味噌。きゅうりは浅漬け。包丁が入りシャキシャキです\(^ω^)/
⚪︎お菓子と抹茶〜あんこは2種類。チョコ味とコーヒー味の粒あん。面白い。抹茶とあいます。
