備忘録
前々から訪問したかったお店に訪問。
素材にあわせて大将が最適と思われる揚げ方を選択しており、江戸前の天ぷらとは違った新鮮な体験をさせて頂きました。
特に、車海老(長崎)のレア加減、鱚(玄界)のふぁふぁの食感、穴子(対馬)のふっくらの中のとろける甘さなど絶妙の揚げ加減、一言で言えば揚げの天才だと思いました。
