水タコは柔らか
帆立真丈はお出汁が秀逸で
真丈の甘み旨味で食べさせるギリギリの塩分よ
やっぱりプロは違うな
牡蠣の煮付けのぷっくりした部分は鮭の白子を煮付けた食感で新しい発見だわ
貝と魚なのに不思議だね
これは日本酒でしょーと大将のおすすめをいただく
ヒラメやすずきの熟成は白身好きにはたまらない
赤身は中に海苔が一枚挟んであって口中で鉄火巻きとなる
面白いわ
糸もずくはさっぱり爽やか
アンコウの唐揚げは歯応え良くビールに戻りたくなるよ
ボタン海老も大きなホッキも間違いなく甘くて美味しい
秋刀魚の握りは今日一の驚きで
てっきり大根おろしが乗っているかと思いきや玉ねぎおろしなの
辛味がピリッとして秋刀魚の臭みは全くなく
とろりとした身とシャリとの一体感が素晴らしい
青魚は生姜がぴったりだと思っていたけれど
大将曰く道東では秋刀魚のお刺身を胡椒醤油で食べることもあるんだって
試してみたいわ
中とろはお塩で中にはべったら漬けが鋳込んであって大好きよ
ウニは大好物で三十貫食べられるね
最後は男山のゼリーでさっぱりと
冬は何かな?また来ようっと
