2023年12月にオープンするやいなや、国内外から多くの評判を呼び、食べログアワードも初エントリーでシルバーを獲得されて、今や日本を代表する日本料理店との呼び声も高いお店☆
前回は3月に初訪問して、その人気の理由が分かりましたが、今回もグルメなお友達からお誘い頂き、再び喜び勇んで行って来ました(´∀`)♪
お店は最寄りの京都市営地下鉄「鞍馬口駅」から歩いていくとひっそりとした住宅街の中に有り、今回は少し早めに着いたので、近くの御霊神社で参拝して、心を鎮めてお店へ向かいました♪
時間になって表に出てこられた女将さんにお店の中へ案内されると、まるで世界が変わるようで、アプローチからカウンターの有る席まで、素晴らしい設に、これから始まるコース料理に期待が高まります(^^)♪

夏に嬉しい冷たい先付けから始まり、お造り、椀物、焼物と素晴らしい料理の連続にお酒も進みました(^^)♪
松本進也大将は、京都の名日本料理店「和久傳」で19年間研鑽を重ねられた方で、
「高台寺和久傳」「室町和久傳」では料理長も務められたとのことですが、柔らかい接客姿勢そのままに、人気店となった今でも謙遜された姿勢は素晴らしいなと思います。
料理は素材の味を引き出すことに注力されているのはもちろんですが、大将の良い素材を集める努力が改めて素晴らしいなと感じました♪
大将念願の囲炉裏焼きの研鑽にも余念がない様で、素材に合わせた焼き方の妙を楽しめました(´∀`)♪
前回は囲炉裏前の席でしたので、大将以外のお店の方の印象は余り無かったのですが、今回は入口側の席に座り、多くのお弟子さんが厨房とカウンターを行き来するのを見れたのと、女将さんがこと細やかに、お酒のおかわりや料理の説明などのおもてなしを受けて、改めて美味しいお店にはやはり大将を支えるスタッフがいてこそなんだなと感じました(´∀`)♪
中国古典「大学」の一節から取られた、「徳を積み、励むことが一番である」という意が込められている店名の通り、伝統の和食を崩さず、
どう遊ぶか⁉️自分らしさを出せるか⁉️
を常に考えておられる、徳ハ本也さん☆
今回もしっかりと徳ハ本也流日本料理の数々を楽しませて頂きました♪( ´▽`)
これから益々、人気に拍車がかかりそうな予感しかないですね♪( ´▽`)
