素材を感じる和食屋さん。
前回伺った時に、春になるとクマと筍のお料理が美味しいと聞き、クマを予約して再来店です。
以下、1万円のコースです。
①白海老のお刺身:お醤油代わりに、イカのからすみで頂きます。紫蘇の花も良い風味です。
②もち米を炊いたものに、コシアブラ(山菜)をあわせたもの。
③イカ
④甘鯛の唐揚げ
⑤セリの胡麻和え
⑥蒸しあわび:柔らかい鮑で、出汁のジュレが乗っています。これを鮑の肝のソースにつけて頂くのですが、何度頂いても、こんなに爽やかな鮑は他にはないですね。
⑦ホタルイカの酢の物
⑧タケノコと白身魚のお吸い物:薄いかつおだしで、筍の風味が良いです。
⑨お刺身:鯛と富山海老。富山の海老は美味しいです。
⑩タケノコと稚鮎:孵化して間もない鮎で、海から川への遡上をする前のほんのわずかな期間しか頂けないそうです。

⑬お食事:赤出汁と、ノドグロと三つ葉の炊き込み御飯です。ぶどう山椒の風味が印象的です。
⑭蓮根餅:黒砂糖と小豆が少し入ってます。焼き立てアツアツで、甘くなり過ぎない感じです。
このお店はお野菜の風味が良くて美味しいですが、同時に白海老のお刺身(カラスミ)と、蒸し鮑(爽やかな肝のソース)が美味しくて、やっぱりこれが看板料理なのかな?
・・・あれ?クマさん・・・
店主の説明で、稚鮎はほんの短い期間(1週間だったかな?)しか採れない貴重なものだそうで、くまさんは次回に持ち越しになりました。店主は、次回の予約時に「クマを食べそびれたものですが」と言って下さいとのこと。
