匠系列の鮨店のひとつ”匠 進吾”さん。
四ツ谷の”すし匠”さんで18年間修行された、高橋進吾さんが構えた店です。
場所は青山。
ホンダ本社の裏手にあるウィン青山の1階です。
表には”匠 進吾”の看板のみで、知らないと通り過ぎてしまうかもしれませんね。
店内はカウンター席のみで8席。
オープンして3年程経つそうですが、明るく清潔感がありまだ新しく感じました。
同じ系列の”すし匠 斉藤”さんと同じく、海ぶどうとワカメから始まり、
つまみと握りが交互に出されました。このスタイル大好きです(笑)

安定の品数の多さ(笑)
待たされる事なくテンポよく出されるので、どんどん食べてしまいました。
一品料理も酒のつまみにピッタリの味付けで、酒が進む進む!(笑)
握りも絶品で、さすが匠といったところでしょうか。
予約困難のため、次はいつになるか分かりませんが、
また必ず再訪したいと思います。
