前日に電話で予約しました。
当日行くと扉には満席の木札がかかってました。
行くなら予約必須ですね。
若いスタッフの子が一生懸命接客してくれてる姿を見てほっこり、店主さんの優しい対応もまた好感度上がる。
どれも下処理や火入れが丁寧で、旨みが肉の中に凝縮している。まさに職人技。
東京でも食べれたら最高だなー
鳥刺し
→鳥の弾力がぷりんぷりんと跳ね返す。それをつける醤油が格別に美味い。あまりにも美味しかったので醤油以外に何か混ぜてるのか聞いたら醤油だけとのこと。
お店の地元にあるお醤油屋さんとのことなので、これもまたポイント高い!

→砂肝の白い部分かな?丁寧な仕事!
つくね
→噛んだ瞬間に肉汁が口の中に広がる。こんなつくねは初めてだ!
えんがわ(手羽先のまわり)
→皮特有の臭みや癖がない。
せせり
→いつも食べてるせせりが一般鶏としたら、こちらのせせりはアスリートだな!ってくらい弾力も食感も何もかも違う。
砂ズリ
振り袖(肩周り)
→クミンがかかっている。鳥刺しの醤油をちょんとつけて食べるのもまた格別。
