祇園四条駅からタクシーに乗りあの時と同じようにして訪れた「菊乃井本店」。
打ち水された店の前に立ちまた再びこうしてこちらへ来れたと感慨深く店を見上げました。
6年前初めて連れてきて頂いた時の感動が忘れられずまたいつか来たいとずっと思っていたお店、
実は私のInstagramのサムネはその時のもので
大好きな料理長の村田さんとあまから手帖の門上さんと一緒に記念日撮影して頂いたものです。
そして昨年の10月に開催された『ミシュランガイド京都大阪2023の掲載店発表』の際は会場にて
三つ星を受賞された村田さんのお話しを目の前で聞くことができまた記念すべき日に立ち会えたという喜びと感動で胸が震えたのを覚えています。
『14年連続星を取り続けるという事は並大抵の事ではなく毎年この時期になると1週間ほど前から具合が悪くなり痩せてもうガリガリ。』と会場の笑いを誘う人柄や師匠である瓢亭の高橋英一さんの教えがあって今の私がいると仰る師を敬う言葉、弟子の研野さんの初の星獲得を喜ばれる気遣いの言葉が思い出されました。
案内された10畳ほどのお部屋に鮮やかな漆塗りのテーブル、
奥には苔むした石垣の緑の鮮やかなコントラストが目に眩しい。
誘われる様に縁側に立つと少し歪んで映る大正硝子越しに白い鱗を光らせた錦鯉が優雅に泳ぐ姿、
当時の人も同じようにここに立って風情あるお庭を眺めたのかなと想いを巡らせます。
お部屋の中にもそこかしこに春が。
飾られた色鮮やかな菜の花と桜花にとまる小禽の掛け軸、幼子の愛らしい置き物はよく見ると手にお雛様を持っていたりして。
日本料理とは茶の道同様、料理だけでなく季節を感じさせる設え、時を経て大切にされる陶器や漆器、日本料理とはそれらの美しさを楽しむ総合的な芸術であると私に初めて教えてくれたのがこのお店でした。
いよいよコースが始まります、
弥生の献立からは心を掴む八寸、二段の入れ物のピンクの結びを解くと中には二枚貝の上に春の食材が彩られていました。
木の芽和えの蒼い香りと独活や筍のコリっとした食感が軽やかで叩く程に柔らかくなるという蛸の煮付けの美味しさを噛み締め運ぶ冷酒が身体に染み渡る。
向付に続いた煮物椀の出汁の上品で蛤の出汁が実に深く美味しい。
真丈はふっくらとして出汁の良さを引き立たせる優しい味わい、黒い漆器に映える白く澄んだ出汁の色が今も鮮明に心に残っています。
面白かったのは中猪口、
梅肉を解し白子餡と和えて頂くのですが初めて食べるなんとも不思議な美味しさが後を引きました。
白子は主張せずまるで濃厚な豆腐の様に円やかでそこに加わる梅の酸味、口の中で溶け合い旨みが満ちる。
最後のご飯も姫ちらしと愛らしく
添えられたきのこのすり流しはもはやフレンチのスープのような繊細な美味しさでした。
菊乃井の信条である伝統文化だけでない世界に目を向けた新しい味や華やかな美しさを表現されているのだとお料理を通して感じることができました。
初代であるお祖父様の残した菊乃井の心構え。
美しくして浮華ならず、
渋くして枯淡ならず、
情あり才あり気合あり。
本日は正にその精神を受け継いで未来に続く「菊乃井」の姿が見えるようなもてなしでした。
