雲仙の老舗旅館である福田屋さんの中にある『香ふく』さんは今年の2月に開業したばかり。地元の食材を活かした高級天ぷら料理専門店である。
島原半島の海の幸、山の幸を天ぷらでライブ形式で揚げてくれる。天ぷらに使う小麦粉は地元産のミナミノカオリを使用。液体窒素を振りかけて小麦粉の粒子をさらに微粒化し、食感を軽やかにする心遣い!分子ガストロノミーを取り入れた演出が素敵です。
こちらの香ふくさんはクルーズトレインななつ星の昼食にも採用されているようで、その腕前はお墨付きである。
まずはじめに、食前の黒田五寸人参を使用したジュースをいただきます。コールドプレスされた人参は、糖度が高く、人参だけでできてるとは思えないくらいに甘くて美味しい!
◾️前菜三種盛り
自家製のからすみ天ぷらは絶品です。これだけでビールが進みます。
◾️お造り
コチと鮪の大トロのお刺身はとろけそうなほどに柔らかい。きゅうりの飾り切りでできたカエルも見事です。
◾️海老の頭の天ぷら
カリッと揚がった海老の頭はカリカリで煎餅のような歯触り。海老の頭のこんな楽しみ方があったんですね!
◾️海老の天ぷら
揚げたかたちは海老が腰を曲げて、立っている。洒落た演出です。
◾️蓮根の天ぷら
こちらも地元で有名な蓮根です。シャキッとした歯応えに天ぷらで甘さが引き立っています。
◾️発芽ニンニクの天ぷら
発芽した芽と根っこを楽しみます。根っこはニンニクの風味がしっかりとして目から鱗の逸品です。
ここまで、塩で天ぷらいただきました。小浜の塩は柔らかくて食材の味を引き立てる。五島の塩よりこちらの小浜の塩がお気に入りになりました。
◾️あわびの天ぷら
あわびの肝ソースをつけていただきます。こちらのあわび肝ソースが驚くほどに美味い!ソース残すのもったいないので、たっぷり付けていただきました。
◾️ズッキーニと銀杏の天ぷら
すでに銀杏の季節ですね。季節の野菜をいただき、その時の旬をたのしむ。次に何がくるのか、期待大です。
◾️有明海苔の天ぷらいくら乗せ
この組み合わせはベストマッチですね!軍艦巻きのライス抜き天ぷらです。一口ではたべきれず、いくらがこぼれ落ちるくらいたっぷりです。
◾️赤茄子と青茄子の天ぷら
みずみずしい茄子の天ぷら!一気に口に放り込んだので、口の中が大火傷です。それでも美味しい茄子の天ぷら!素材のクオリティーが光ります。
◾️蛸の酢の物
ジュレになった酢醤油が斬新で面白い!箸休めに最高の一品です。
◾️黒田五寸人参の天ぷら
人参1本丸っと40分かけて天ぷらで火入れした一品。ホクホクで中まで柔らかくなった人参は甘くて美味です。
◾️さつまいもの天ぷら
さつまいもを丸っと1本50分かけて天ぷらで火入れをしています。スプーンで中身をすくっていただく天ぷらはスイーツと言っても過言では無い!
◾️海老の茶碗蒸し
茶碗蒸しにかかっている餡は海老の出汁がしっかりきいて、上に乗った海老味噌の天ぷらと一緒に茶碗蒸しの味を引き立てます。この茶碗蒸しには驚きです。
◾️香の物とごはん
釜で炊き立てのご飯は長崎県産のにこまる米です。ここでいただく試食のご飯で、からすみ茶漬けにするか、かき揚げ丼にするか、かき揚げ天麺にするかの選択になります。
◾️からすみ茶漬け
こちらのカラスミは絶品です。これだけ食べにくるだけの価値はあるかもしれない。雲仙茶でこした出汁が美味いこと美味いこと!
◾️地産フルーツ
南国長崎のバナナやドラゴンフルーツなど、完熟の甘い特選フルーツが最後のデザートです。
今回は1泊を福田屋さんで全国旅行支援を活用したからお得にいただけました。ちょうど今、55周年を迎えるにあたり、改修工事を行なっているので、旅館全体に幕がかかってますが、美味しい料理と最高の温泉があるので、そこさえ我慢できれば、最高のおもてなしが得られます。
またの機会にもう一度温泉と香ふくさんの天ぷらを楽しみたいですね!
