静岡を代表する日本料理の名店「日本料理FUJI」。
こちらは、「やるべきこと、やらざるべきこと」を徹底的に見極めた、引き算の美学が光る一軒です。店主・藤岡氏は京都をはじめ都内の日本料理店で研鑽を積み、2014年に独立。2019年頃からは静岡の食材に真正面から向き合い、「ここにしかない日本料理」を追求し続けています。
魚は、日本屈指と名高いサスエ前田魚店が選ぶ最高品質のものを使用。出汁の要となる鰹節は、焼津産一本釣りカツオの本枯節の中でも、直火で燻す手火山造りのみという徹底ぶりです。野菜もまた、藤岡氏自らが足を運び選び抜いた静岡の一級品ばかり。
調理の多くはカウンター前で行われ、胡麻をする音、皮目に火が入る香り、鰹出汁の立ち上がりが、空間そのものを料理の一部にします。土鍋ご飯は煮えばなから炊き上がりまで三段階の表情を楽しませ、「香りもごちそう」という思想が随所に感じられる構成。
華美ではないが、清らかで潔い味わいが静かに心を打つ、静岡の風土を映す日本料理を頂くことができます。
<頂いた料理>
◆カマスの蕪蒸し
ふっくらとしたカマスの滋味を、蕪のやさしい甘さがそっと包み込む一椀。
銀餡はあくまで静か、山葵の澄んだ辛みが輪郭を整え、余白まで美しい仕上がり。
◆伊勢海老
焼津産の伊勢海老を目の前で捌くところから始めます。そして、殻ごと炭火でさっと炙り、醤油にくぐらせる潔さ。
濃厚な海老味噌に水菜と海苔の軽やかさが重なり、日本素材だけでどこかモダンな一皿に。
◆鰯と麻機蓮根
在来種・麻機蓮根はまるで芋のようなほくり感。鰯は臭み皆無で、旨みだけがまっすぐ届く。砕いた餅の衣とからしきみずが、滋味に遊び心を添える。
◆イトヨリ鯛
手火山造りの本枯節が導く澄んだ旨味。レア気味に火入れされたイトヨリ鯛はねっとりと艶やかで、蕪芽としめじが静かな余韻を重ねる。
◆お造り
ひらあじは軽やかに、ほんめじまぐろ(よこわ)はじわじわと鉄分を感じる深み。
派手さはなく、素材の個性が素直に立ち上がる。
◆白甘鯛
こちらのお店のスペシャリテ。松笠焼きにした白甘鯛は、繊細な繊維がほろりとほどける。
添えられたアラだしが、上品な甘みをさらに引き出すシンプルながら芸術的な域に達した一皿。
◆四ツ溝柿の白和え
十日かけて渋抜きした柿の濃密な甘さに、金胡麻の芳ばしさ。
ねっとりとした白和えが全体を繋ぎ、余韻まで美しい秋の甘味。
◆海老芋(磐田産)
出汁は昆布でも鰹でもなく、なんと海老芋の皮のみ。
ねっとりふんわりとした身に、醤油麹のやさしい甘みが寄り添う、素材主義の極み。
◆どうまん蟹
雌の卵と味噌を合わせた濃厚な一口。身は驚くほどやさしく、小松菜の青みと柚子胡椒が後味をきりっと引き締める。
◆金目鯛
低温の油で蒸し煮にした金目鯛は、脂が静かにほどける。かわねの原木椎茸が旨みの奥行きを支える一品。
◆ご飯
一杯目は銀杏とむかごのやさしい甘さ。
二杯目は桜えびをさっと揚げ、香りを主役に。
締めは伊勢海老の殻から引いた出汁の雑炊。余すことなく、物語は最後まで美しい。
◆栗きんとん
ねっとり甘いコースの締めくくりに相応しい上品で力強い一皿。
