大阪にある名店鳥匠いし井の分店、オープンした2022年から数年経っても相変わらず予約が取りづらいので、前もって計画しないと中々行けないお店だが、漸く念願叶って平日20:15の回にお邪魔してきた。
それにしても、お店は、麻布十番というよりも仙台坂裏の閑静な住宅街の一角にひっそりと佇んでおり、これでもか!って言うぐらいすっごい隠れ家的な場所にある!
黒い壁のアプローチを進んで、ドアを開けるとそこには、焼き場をコの字で囲んだカウンター席があり全面木の温もりを感じるとても小洒落た大人な空間で、席に着くと、これから出てくる串を楽しみに自然と気持ちが昂ってくる素敵な店内♪
こちらのお店は、天草大王と比内地鶏の銘柄鶏を中心に部位によって美味しい鶏をかえているらしい♡
ビールで喉を湿らせてると、目の前の炭火の焼き台で大将による火入れのショーが始まる♪
と思いきや先ずは、
◯ 鶏と筍のワンタン
…ぷるんぷるんのワンタン耳と鶏の肉汁と筍の旨味歯応えが秀逸な一品から始まった
そして串へ…
◯ 抱き身(むね) 山ワサビ和え
…皮はパリパリ、でも肉はふんわり柔らか、素材の良さを最大限引き出す火入れ加減が素晴らしい!
◯ せせり
…もちもちっとした食感と噛むたびに染み出す旨味が最高!
◯ ホワイトアスパラ
…旨味を閉じ込めて焼いてて、口の中で広がる美味さが堪りません!
◯ 胸肉あられ揚げ
…しっとり胸肉とカリカリっとしたあられとの食感がなかなかよろしい〜♪
◯ おたふく(胸腺リンパ)
…噛むと、最初に柔らかくクリーミーでて甘い脂を感じ、次にしっかりとした歯ごたえの食感を楽しめる希少部位で美味しい〜
◯ 箸休めにコンソメスープ
…串うちの時に切り落としたお肉を余すことなく丁寧に炊いているらしく鶏出汁の旨味が出まくっている〜!
◯ 手羽先
…飴色の焼きが入った皮目がなんとも美しく、そしてパリパリの皮の奥からはジューシーで瑞々しいお肉が♪
◯ 軟骨
…軟骨の周りのお肉の弾力感と旨味VS軟骨のコリコリ感のバランスを楽しめるなかなか他店ではお目にかかれない癖になるお味♡

…レバーに似てながらレバーのストレート感とはまた違った濃厚な味わいと弾力が癖になる一串!

…皮やぼんじり好きには堪らない皮のパリパリ感と身のプリプリ感が素晴らしい〜♪

…黄身をとろっと仕上げているところは流石です!
◯ そぼろご飯
…行き着いたのは、炊き込みご飯風のそぼろ丼!もちっとしたお米とそぼろのバランスは悪くない!
気付けば11時過ぎ…大満足大満腹でお店を後に〜
