前々から行ってみたかったお店だが、東京カレの、蛎殻町すぎたから大将が独立された時の暖簾の感動秘話を読んでからは、是が非でもすぐに行きたくなった築地の名店!ようやく念願叶って17時の回で訪問♪
暖簾をくぐると凛とした居住まいの僅か8席のカウンターが現れる…一瞬緊張を覚えるが、安井大和大将の優しい笑顔で場が和む♪
ビールで喉を湿らせてるとさっそく開演♪
蛎殻町すぎた譲りの鰯の巻物も凄かったが、兎に角、光り物の扱いがお上手過ぎて感動♪
春子鯛の昆布締めは圧巻!
そして得意な白子や鮟肝の一工夫がこれまた凄い!
赤身や鱒の漬けも芸術的に素晴らしいお味で、最初から最後まで至極の時間を過ごせます♪

…アオリイカ裏包丁入りまくりで超しっとり

…粒マスタードで頂くことで赤身の旨さが引き立つ一品

…さっと湯通しすることでふっくら柔らかく甘味を感じ、ちょいと効かせた青山椒が良いアクセント♪

…身厚な脂ののった鰯の旨味が堪らん!真ん中に入った九条ネギが素晴らしいバランスを醸す

◎ 追加: あん肝と奈良漬…崩した濃厚な旨味のあん肝と奈良漬の独特な酒の香りと食感のハーモニーが秀逸♪
