鈴木さんのお寿司を久々に食べたくて、移転後初訪問(と言っても)。移転といっても、能楽堂ビルからビル二つほど横の美術館ビルで同じ銀座電通通り沿い…移転後の居住まいも、清爽な中にも落ち着きを放つ和の空間で、前のお店と同じ10席限定の広々としたカウンター特等席は相変わらずの素晴らしい居心地♪
入店すると、鈴木さんがニコッと優しい笑顔で迎えてくれる♪ そして、奥さまとの二人三脚も変わらず♪…お世辞にも安いとは言えないのでなかなか頻繁には来れないが笑、それでも食べたくなる鈴木さんの美味しいお鮨を久々に頂けると思うと心が躍りだす。
ここ鈴木さんは、しゃりは、赤酢を基調としてて、ほのかに甘みもあり、全体的にしゃっきりしたお米を立たせた感じで、大き目に切ったネタを確り支えつつ、ネタとシャリのバランスが程よくて大好きだ。何よりも、その時々のネタ選びが最高で、希少系含めいつも喜ばせてくれる〜♪
そして、大将のネタに合わせた焼き加減、炙り加減、炊き(煮)加減がこれまた最高で、細部に至るまで技が光る♪

…カレイの中でも最高級と言われる幻の名魚。旨味も甘みも、ちょっとしたコリコリ感も堪らない繊細な一品に悶絶〜

…夏の豊予海峡のお魚はまさに海の宝!敢えて皮目を残して、さっぱり淡白な白身と脂身の豊かな旨味が堪らない味わいで感動〜♪

…今年の津軽海峡から噴火湾にかけて回遊している本鮪は、餌(スルメイカ)が豊かだったのか、赤身の味が濃厚でこれは最高〜♪脂身も甘みほんのりくどすぎず美味しい!希少部位の背トロは、中トロとはこれまた違ったトロけるような独特の旨みを楽しめる♪
