瑞々しい!
■もつ煮
これとご飯があればしあわせ。
■天ぷら
天ぷらはこちらで頂ければもう充分です。
塩は"付ける"ではなく"ふり"ましょう。
セリの天ぷらがとんでもない美味しさです。
■山ウドの酢味噌和え
シャクっと爽やかな味変。
■岩魚のお造りと山梨県小菅村の手作りコンニャク
イワナのお刺身。
そのまま、、、旨い。
しょうゆ、、、旨い。
塩、、、!!!
塩で頂くと脂の美味しさが異次元です。
■冬の珍味
鹿の背ロースのロースト/山女魚の山桜燻製/猪のフランクフルト
どれも実に物が良いです。
■岩魚の焼き物
川魚はお肉を食べてる感が凄くします。
磯の香りがないからでしょうか。
子供のころは魚が苦手でしたが、川魚だったら食べられたなと思います。
■山家鍋
山菜、茸、そして長野県伊那谷の猪。
秋のキノコ鍋よりも、お肉のお出汁がある分好みでした。
お雑炊か焼きおにぎりか選べるのですが、うーん焼きおにぎりで。
そのまま食べるも良し、お茶漬け風にするも良しで大正解でした。
1辺10センチ弱の特大おにぎりが二つ。
これを完食できる口福、自分の胃袋に感謝です。
お持ち帰りも可能ですよ。
■からし菜の小鉢
からし菜にお湯をかけ蒸したもので、調理法名は失念。
辛子和えのような辛味で、山葵系が苦手な同行者は食べられませんでした。
■柚子シャーベットに柚子ジャム
どちらも手作り。濃厚だけどさっぱりで最高の締めでした。
