西新宿の喧騒を抜け、静かなビルの3階に佇む「鮨 立花」さんにお伺いしました。今回は「鮨会席 上」コースをいただきました。
まず特筆すべきは、落ち着いた空間設計と接客の丁寧さ。カウンター越しに職人の手仕事を眺めながら過ごす時間は、まさに“鮨を愉しむ”ための贅沢なひとときでした。
■お酒
お料理に合わせたお酒のラインナップも充実しており、まずは《生ビール》で乾杯。続いて《知多ハイボール》のスムースな飲み口で舌を整え、《荒越し梅酒》のまろやかな酸味でアクセントを。そして締めには《竹鶴》をロックで。どの酒も、鮨の繊細な味を邪魔せず寄り添う印象でした。
■握り
●ひらめ:淡白ながら昆布締めの旨味がじんわり。スタートにふさわしい一貫。
●やりいか:ねっとりと舌にまとわりつく食感が秀逸。軽い塩と酢橘が絶妙。
●本鮪中トロ:脂のノリが美しく、舌の温度でふわっと溶ける至福の瞬間。
●アジ:薬味の使い方が控えめで、ネタの良さが引き立ちます。
●いさき:皮目を軽く炙った香ばしさが印象的。梅肉との相性も◎。
●赤身漬け:きちんと寝かせた赤身の味わい深さ。醤油の香りが立っていました。
●かます:焼き霜造り風の提供で、香ばしさと身の甘みのコントラストが際立ちます。
●車海老:茹でたての温度感が残る贅沢な一貫。海老の香りが立ち昇ります。
●バフンウニ:ミョウバンの嫌味ゼロ。舌の上でとろけ、海の香りが広がる極上品。
●アナゴ:ふっくらと蒸しあげ、ほんのり甘めの煮ツメとよく合います。締めにふさわしい優しさ。
素材の鮮度は申し分なく、仕事も一貫ごとに丁寧で、安心して身を任せられる印象です。品の良いお店ながら、肩肘張らずに楽しめる雰囲気もあり、西新宿という立地でこのクオリティは貴重。接待や特別な日にも重宝しそうです。
総じて、職人の誠実な仕事と、素材へのまなざしが伝わる上質な鮨体験でした。リピート確定です。
