対馬地鶏レバーのアイスと日本蜜蜂の一年熟成蜂蜜
♢穴子 黒麹
朝釣りの近海産の穴子を風に当て、旨みを凝縮。
皮めを炙り、沖縄黒麹を使用した酸味のあるソース。
♢多比良ガネ
島原半島の渡り蟹『多比良ガネ』を生のままマリネ
ベーコンで包んでから春巻きにし、カラッと揚げ。
無農薬間引き葡萄で作ったビネガーのソース。
♢ニシガイ 蕪
有明海『ニシガイ』を二日麹につけ、低温調理。
赤蕪とくわいと炭火で炙って、貝に詰めています。
地鶏の骨や車海老等で取った泡ソースで頂きます。
♢鯖 椎茸 出汁
五島『鯖』一日間接的に風に当て、旨みと食感up
橙酢でしめ鯖にし、ビール酵母のパン生地でベニエ
鴨や鯛の骨•島原昆布で取り、煮詰めた濃厚な出汁
♢有明海の芝海老 一年熟成のえたり
『芝海老』は4日麹漬けし、熟成発酵させています
片口鰯の塩漬け『エタリ』と、その魚醤を使用した
エキゾチックなソース 林檎やセロリと一緒に…
♢鮑 豚骨スープ
五島『鮑』高温•短時間、予熱で火を通す。
平戸豚の豚骨を2日煮込、豚ミンチ等を入れて、
濁りや雑味を取り除いた絶品スープでいただく。
♢真鯛
島原『天然真鯛』を海直結の生簀で一日泳がせ、
胃や腸の物を消化させ臭みを取り除き、〆る。
先程まで使用していた竹箸を燃やし、燻し焼き。
五島の蛤•島原の雲丹•ギルの新芽のサラダ
♢鴨
茨城『鴨』24時間完全放し飼い、無農薬の餌のみ
薪火で、じっくりと焼き上げてスライス。
鴨や地鶏でとったブイヨンのソース
無農薬みかん発酵させたソース。バターナッツ添え

言葉に出来ない…全て素晴らしいお料理でした。
