松阪牛の老舗として名高い和田金で、網焼きとすき焼きの両方をいただきました。
結論から言えば、「松阪牛とはここまで違うのか」と実感させてくれる一軒です。
まず網焼き。
炭火でじっくり焼かれる肉は、驚くほど柔らかく、噛んだ瞬間に上質な旨みとコクが広がります。特に印象的なのは牛脂の質の違い。重さやしつこさは一切なく、香りと甘みだけがきれいに残ります。
すき焼きは、割下を使わず砂糖と醤油で仕上げる伝統的なスタイル。
一見シンプルですが、火入れや味の含ませ方には確かな技が必要で、ここでいただくと「これぞすき焼き」と腑に落ちます。肉の持つ力が強いからこそ成立する調理法だと感じました。
そして特筆すべきは給仕の素晴らしさ。
