カルビやロース、タンといった限られた部位しかなかった焼肉に、「希少部位」という概念を持ち込んだのは、「焼肉ジャンボ」さんだったと記憶しています。
「先にモノがあって、それに名前を付ける」のではなく、「名前がつくことで、その対象が他から区別されるようになる」という、まさにソシュールの言語学理論を証明するような出来事が、焼肉界で起きたのですね笑
そのジャンボさんで修行をして、「よろにく」を創業されたのが、こちらのお店のオーナーでもある、桑原VANNE秀幸さん。
ちなみに「よろにく」は、氣志團の綾小路翔さんが名付け親だとか。なんか、それらしいですよね。
希少部位をそのまま出すだけでなく、さらに美味しく、そして見栄えよく、カッコよく出す。桑原さんは、焼肉界に「オシャレ」の概念を持ち込んだと言えるでしょう。
コースの一品一品が、まさにオシャレそのもの。
ハラミの塊肉、キャビアと金粉が乗ったお寿司、白トリュフのすき焼き、シャトーブリアンのカツサンド等など。これでもかと洗練された料理をいただくことができます。
オープン当時は予約を取るのも大変でしたが、最近はわりと取りやすくなっている様子。
それでも15年以上の永きに渡って、ブランドを維持し続けているのは、本当に素晴らしい。一時代を築き、さらに進化を止めない名店です。
