あらゆる食の概念が覆されました。衝撃でした。おいしいは最低条件。素材が本来持つ香りにフォーカスし、最大限の香りが引き立つ条件を揃えて提供してくれます。
「抽出」と名付けられたオマールのビスクは、ブルターニュから空輸で生きた状態で届いたものを一度見せていただき、身も殻も全てをミキサーにかけ、水と塩のみで味付けされたものが何と生きた状態を見てから5分でビスクとなって提供されます。生クリームも何も余計なものは一切入っていません。まさに「抽出」です。
メインのボニュ焼きは、日本に数十頭しかいない和牛(黒毛和種)の基礎をなす血統の元祖「竹の谷蔓牛」のサーロインとトゥルヌド(ヒレ肉の部位)の2種類をいただきました。焼き時間が何と6時間。表面を焦げる寸前の状態まで焼き、中は余計な水分を出し切って旨みが凝縮され、牛肉の風味が閉じ込められたとても濃厚な味と、これまで食べたことの無い食感でした。
これらの料理は、美食家でオーナーの来栖けいさんだからこそ成せる業。一緒に提供されるワインも全て来栖けいさんセレクトの、普段なかなかお目にかかれない素敵過ぎるワインの連続でした。
ちなみに店名の「ボニュ」は「母乳」からきているとのことでした。
