東京都・[秋葉原、神田、水道橋]エリアにあるラーメン店です。
JR総武線・山手線・京浜東北線「秋葉原駅」中央改札口より徒歩1分の、ガード下にこちらのお店はあります。
2008年北区東十条で創業し、2020年秋葉原で日本一の醤油ラーメンを目指し移転したお店です。
系譜は「牛久大勝軒」で修業したのち、イタリアンレストランでのアルバイトを経て、東十条に麵処ほん田をオープン。
牛久大勝軒時代は「中華蕎麦 とみ田」の富田治氏とは兄弟弟子の間柄。

特製のトッピングは、チャーシュー3種・のり・味玉・ほうれん草・メンマ・白髪ねぎ等。
店奥の製麺室で作られる自家製麺は、適度な弾力性と歯切れの良さがあり、ツルツルでのど越しがよく、いくら食べても飽きない。
そんな中細ストレート麺と合わせるスープは、黄金色に澄んだもので、千葉県大網白里市の かねと水産のにぼし、伊吹いりこ等々合わせた魚介スープ。
丼の中で大きな存在感を放つチャーシューは、豚肩ロース・豚ロース・鶏モモを使用。
とくに豚肩ロースは脂身側と赤身側に分けてカット。
真空低温調理やオーブン焼き、吊るし焼きなどさまざまなテクニックを駆使し、豚はスモーキー、鶏はジューシーな仕上がりだ。
最高級「奥久慈卵」を使った味玉が丸々1個入っている。
箸で割るとトロ~リ半熟、それがドストライクな半熟具合で黄身の味が濃いものである。
あと卓上の調味料で、香味油がスープに奥行きを出してくれていい味変になって最後まで飽きずに完食しました。
