本日、2025年5月30日からの天然鮎コースの始まりに合わせ、「美加登家」さんにお伺いしました
今年は同期の仕事仲間との訪問です
仲間は初めての訪問です、せっかくなので天然鮎コースの初日に誘いました
年々お値段が高くなりますが、年一回の贅沢ですので、予約が取れるうちは頑張って訪問しようと思います
本日、いただいたのは以下の通り
①前菜
鮎の南蛮がゆ
→米の味がしっかり出ています、冷たいお粥と温かい鮎が絶妙なハーモニー
前回からお粥の感覚が変わっている気が…優しいけど濃厚な感じで食べやすいですね
掴みのカウンターパンチとしては最高ですね
②椀物
冬瓜と鮎のお椀
→優しい一番出汁を出汁をたくさん含んだ冬瓜は美味です
焼いた鮎に箸を入れると違った味わいになります
③刺身
鮎の背越し
→氷の下には1匹分の鮎の背越しが冷やしてあります
紙で水気を取り、薬味と一緒に味わいます、骨も気にならない程の柔らかさ…絶品
解禁して間もない時期は背越しでいただきたいですね
④焼き物
焼き鮎
→今年初物の焼き鮎、超美味ですね
解禁されて4日だそうですが、しっかりと太った鮎が獲れており、漁獲量は順調だとおっしゃっていました
カリッとした歯応え、口に含んだ時の焼いた鮎香り、身の爽やか旨さに苦味が加わる…絶妙な焼き加減です
これはあと2匹は食べたいですね
⑤口代わり
珍味
苦うるか、子うるかの2種類から一品を選択します
→両方食べたい方は追加注文も可能です
苦うるかを食べた友人はいつもの食べ慣れた塩の効いたうるかと異なり、舌が痺れるほどの苦さにびっくりしていました
一度は食べてみないと分からないので試してみてください
私は優しい甘さの子うるかをいただきました、こちらも美味ですよ
⑥煮物
うるか茄子
→生うるかで煮た茄子は定番のお品
今日は甘さも感じましたが、良い感覚の苦味も感じました
茄子を食べた後、ご飯を投入して和えていただくと前回食べたうるか茄子と比較できます
⑦酢の物
潤菜とずいきの上に鮎の昆布締めを乗せて
→こちらも初めての組み合わせ、鮎は昆布締めも合うんですね
ずいきのシャリシャリした歯応えも面白い
潤菜はポン酢と相性が良いので、面白い一品でした
⑧揚げ物
鮎の春巻き
→ 昨年までの挟み揚げから、新作の春巻きも手渡しするタイプ
中には鮎が1匹丸ごと入っています、サクサクした歯応えが気持ち良いです
うるか味噌がとても濃厚な味わいを演出、下半分には実山椒が入っており味変して楽しめます
⑨ご飯
鮎飯
→鮎の出汁で炊いた煮えばなの様なご飯
焼いた鮎が2~3匹くらいがほぐしてのっています
色々な処でいただきますが、何処の鮎飯よりも美味しいと思います
本当かどうか、皆さんも食べてみてくださいね
⑩止椀
白味噌汁に鮎を浮かべて
→白味噌の味噌汁に骨を抜いた蒸した柔らかい鮎が浮かんでいます
白味噌の甘さと鮎の組み合わせは考え抜かれた一品です
11.水菓子
青梅の甘露煮
→氷の中にある青梅を崩しながら、カキ氷と一緒にいただきます
甘さと爽やかな酸味が広がります
一緒に行った仲間も大満足の様でした
帰りの車の中でも何れも美味しかったと申しておりました
焼き鮎、春巻き、鮎飯、背越し…結局全部に感動したとの事です
一緒にお酒も合わせて楽しんでおり、その部分は羨ましかったなぁ
そう言えば、大将の息子さんが京都の名店「緒方」さんからお帰りになられており、お客様対応をされていました
モデル体型のイケメンですよ、一度、見に行ってみてください
帰りの際には親子3人でお見送りされ、いつもの事とは言え、お店の格を垣間見る気持ちになりました、流石です
今回もありがとうございました
今年こそ、秋の子持ち鮎のコースも食べてみたいなぁと思っています
また、来年も来れる様に仕事を頑張ります
