子どもと行く、九州グルメツアー2日目
今日はツアーのメインのひとつ「pesceco」さんにお伺いしました
前回から一年、一段と注目されて、様々なメディアでも見るようになりました
前回のお品の数々が忘れられず、また、お伺いすることを楽しみにしたところ、やっと予約が取れた次第です
本日、いただいたのは以下の通り
①白茶
→島原の東坂茶園さんの「白茶」からはじまります
○白木蓮のスパークリング
→爽やかなサッパリしたスパークリング
②浜辺の散歩(3種類)
・片口鰯、塩辛バター、さつま芋
→ねっとりとした、片口鰯の香りが前面に立ち上がります
しみじみとした感覚もあり、スタートの料理としてホッとします
・紫雲丹と焼いたパイ、海苔を間に挟んで
→紫雲丹がたっぷり、海苔が良い仕事をしています
雲丹の香りが交わりとても素敵です
・いぎりす、サフラン、にんじん、海藻の粘度でかためてあります
→魚のすり身の様な味わい
中々、難しい味わいのお品ですね
③波紋のように
貝のサラダ、カワハギ、ユリイカ、昆布の泡、カワハギ、ユリイカ、酸味を付けた米
→これは何?
そんなお品は昆布の泡が効いてる
玉葱と酸味を付けた御飯にもピッタリと合っています
死後硬直する前のカワハギ、肝も旨味を出しています
満足感がある一品です
○ウーロン茶
④余韻
岩牡蠣、香茸、生ハムの出汁
→出汁が絶品です
サドルバックを使った出汁は和食の物とは異なります
岩牡蠣も強い味わいがします
炭で燻した貝柱
→トロのような味わいで面白い一品
⑤Fish&ham
29ヶ月熟成されたサドルバックの生ハム
→先ずはそのまま指に取っていただきます
しっとりと味わい深く、やっぱり芸術品ですね
揚げた太刀魚を炙った有明海産海苔を巻いていただきます
→凄いとしか言いようがありません
海苔の香りが鼻を突き抜けます
サドルバックの塩味と太刀魚が相まって強い甘みが爆発します
とても贅沢なお品です
⑥ガネ素麺
島原手延べ素麺の上にはメスの蟹、内子、アサツキ、蟹身
→ふんだんに使われたガネの身に目が行きがちですが、内子の濃厚さにやられます
パスタじゃ無くて島原素麺に合わせるのが面白く、ここでしか食べられない一品となっています
⑦蛸の花束(ブーケ)
島原の本多木蝋(もくろう)工業所のごま油、雄の真蛸、ハーブ(パクチー)、オーガニックニンニク、蛸の醬、ネギのオイル
→今年も鮮やかな蛸の花束をいただきました、こちらも特別感のあるお品ですね
ネギのオイルやパクチー他、複雑な香りが広がります、とても素敵な香りだと思います
蛸の吸盤のプチプチ感がとても良いですね
⑧風味
天然の車海老のラビオリ、山椒葉、実山椒、いりこ氷出汁
→実山椒のパンチが半端なく…かなり効きます
ラビオリを食べると車海老の甘みが広がりますが、実山椒にOKされたままですね
風味…なるほどと関心します
⑨楽園のなかで
九絵と無花果の新葉や柑橘の葉や枝と一緒に草木蒸しにして
→蒸して出た汁も一緒に使います
玉葱味噌、カンボジアの生胡椒、半年熟成したじゃがいも等も使われています
酸味が来た後、九絵が丸っと飲み込んでいきます
古代米の赤米のパンにスープを付けていただきます(写真無し)
⑩ひとつの鍋
本日使った魚のあらや貝の切れ端と島原産ひのひかりを一つの鍋でおじやに
→今回はかなりスパイシーな仕上がり
色々な旨い出汁が泳いでおり、旨味が爆発しています
2杯目は平飼い卵でとじていただきます
アクセントに辛い醬を添えて
→こちらも旨味が際立っていますね
自然とお代わりをいただきました
11.柑橘
バニラと夏蜜柑を使ったデザート
コロンビアカカオを使ったチョコレートを敷いて
コーヒーはホンジュラス、酸味の効いた果実味を感じられるお品
→サッパリとしたデザートですが、バニラと下に敷いたチョコレートは濃厚でした
浅煎りタイプの珈琲と良く合います
2度目の訪問でしたが、以前と変わらない感動の連続でした
生ハム以外は魚、この構成で感動を与え続ける井上さんの料理
洗練された地元の食材に研ぎ澄まされた感覚と熱意が強く感じられます
一緒に行った子どもが「これは凄い」と…唸りそして黙り込む
同じように感動している姿を見て、嬉しくなる父親…少し滑稽ですね
今日も笑顔で調理される井上シェフ、一段と美味しく感じられ、とても好感が持てます
また、しっかり働いて、来年もお伺いしたいです
