日本料理のみならず
蕎麦の修行もされている廣門大将
スタートは自ら焙煎したての蕎麦茶から
香ばしさと爽やかなお茶
大将自ら足を運び仕入れる
大分を中心に九州の秀悦な食材
それを独自性の高い料理に仕立て上げ
感動的な世界を展開しています
決して派手さはないのですが
素材の良さを引き出す丁寧な料理
そして何より独自性が素晴らしい
この日は大将が山に入り収穫した天然の山菜
合馬の筍に里芋やキャベツ
食べる直前まで泳いでいた鮮度抜群の
石鯛、カワハギ、紋甲烏賊、赤足海老
アナグマに山菜
食材の素晴らしさをしっかりと活かしきる料理
もちろん締めには大将手打ちの
二八蕎麦も登場します
独自性の高い料理は印象的
大将のコメントが全てを物語っています
「料理の独自性とは狂気である」と
随所に大将の狂気とも思える
拘りをしっかりと感じます
アクセスの決して良くない場所ですが
お出迎えから料理の進め方や接客
最後のお見送りの瞬間までが素晴らしすぎます
