阪急西宮北口にある鮨割烹の汐さんに初訪問です。西北にある唯一のミシュラン掲載店とお聞きしています。
店内はカウンターのみの9席。非常に綺麗で落ち着いた雰囲気です。気品に溢れてます。
今回はお任せ料理コースでお願いしました。
とても美味しく満足だったので以下あまり美味しいとは書きません。
まずは水ダコ刺から。塩とカボスで頂きます。タコが柔らかい。塩とカボスの酸味がタコの味を引き出してます。
宮城の戻り鰹タタキ。関西からしたら旬の先取り。脂がのっているのにさっぱり。これはうまい。
アイナメとヒラアジの刺身。芽ネギがまいてある一手間が嬉しい。
鱸の照り焼き。タレがいい味してます。濃すぎず薄すぎず、鱸の味を引き立てる絶妙な味付け。さらに木の芽が乗っていてそれがさらにアクセントになっていて良い。
天ぷらは万願寺とうがらし、水ナス、蓮根、鮎。鮎だけは少し残念。少しデカすぎかな?中までしっかり揚げるには厳しいサイズでは?少し骨や頭とかが食べると主張が激しい。味は美味しいですが。
ここから寿司のスタート!
剣先イカ。味も良いけど見た目が綺麗。こんな握り方あるんや!
アコウは白身で弾力が良い。あっさりポン酢ジュレで頂く。
ここでトロ登場。なんかトロが二枚乗ってます!脂が乗っていて濃厚だけどさっぱり。たまらん。
次はみんな大好きノドグロちゃんの炙り。白身でいて脂が凄い。炙りにより香ばしさもプラスされてる。
ハモの梅肉寿司。ハモに梅肉は寿司屋であってもお決まりなんやね(笑)
江戸前大通の穴子。これは凄く柔らかい。ほんまに口の中でとろける。タレもうまい。少し香ばしかったですが炙ってたんかな?
とりあえず最後はミニウニいくら丼。淡路島の生赤ウニとイクラのコラボ。そりゃーうまいわな。イクラに負けないウニの濃厚さがいいね!
まだまだ食べたいから追加注文。
マグロ赤身漬。まさに赤い宝石。キラキラ光ってます。赤身のもつ酸味がいいね。やはりマグロは王道。
金目鯛の炙り。これもまた脂が乗ってる。このお店は脂乗った白身は全部炙るんかな?(笑)
最後はマナガツオの炙り。寿司で初めて食べた。あんまり印象にない爆。
赤出汁は体に染み渡る。トウモロコシプリンは自然の甘みであっさり、うまい。
日本酒もかなり揃えてるみたいです。少し品切れが多いかな?
流石はミシュランです。味はもちろん丁寧な接客で楽しい時間でした。ありがとうございます。ごちそうさま!
