⚫︎とにかく、ネタがデカくて豪華で美味しいです。大袈裟じゃなく、大きさは一般的なお寿司屋さんの3倍くらいで、例えば、はし本の中トロは30g/枚。
⚫︎ものすごく手が込んでいます。海老おぼろを含む事前仕込みから、当日の仕込み・握りまで、とても凝っています。
⚫︎因みに、大将はフレンチ経験ありで、寿司の型に必ずしもはまらない感じがよかったです。↑の③など。
⚫︎従い、10貫コースでも、終わりまで2時間は見ておいた方が良いと思います。
⚫︎ネタが大きくて豪華で美味しくて、手間もかかっていて、10貫6,900円は凄すぎると思いました。その理由の1つは、できるだけ豊洲(市場)経由でなく、大船渡等の港から直接仕入れる方針だから、とのこと。
