*キハダマグロとネギ
青柚子を入れたつけダレにつけたマグロを焼鳥風に焼いたもの
*シャコ
佐賀有明産のシャコ。甲羅が柔らかく、頭からバリバリと全部頂きました
*なまこの茶碗蒸し
宮崎の地鶏の卵と長崎大浦湾なまこのコノワタを入れた茶碗蒸し。上には鰹出汁の餡がかかっていました。
*鳥貝と縞鯵
鳥貝は石鹸のような形の固形のヒマラヤ岩塩にこすって頂きました。絶妙な塩加減になって美味しかったです。
*鰻
煮たうなぎは山葵や有明産海苔と
*もずく酢
福井産岩もずくは酢に漬けて、出汁仕立てになっていました。細いですが、ザクザクしてかなり歯応えのあってとても美味しかったです。
*ノドグロ
芯が残ったアルデンテのような酢飯がノドグロの下に入っていました。上からミモレットチーズがかかっていてリゾットのような味わいでした。
*中トロ
長崎対馬産の夏マグロ。脂がのっているけれど軽いのであっさりしていました。
*ムラサキウニ
宮崎串間産ムラサキウニ
この時期の宮崎でしか食べられないそう

九州の甘い醤油に漬けた赤身にマスタードが添えてありました。マスタードとの相性抜群でした。

今回もつまみ、握りひとつひとつが美味しく、楽しい夜でした。
